Creamy Parmesan Beef Rigatoni with Garlic Butter Sauce
This is an easy pasta dinner you can make with little fuss in your Instant Pot. I made this for Sunday dinner and had Reagan and her boyfriend over. We all loved it . It had good flavor and we served it alongside roasted broccoli and sliced nectarines. The leftovers were great for a lunch the next day! Enjoy!
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Kosher salt
- Black pepper
- Italian seasoning
- Garlic powder
- Onion powder–or add ¼ cup finely diced onion when browning the beef
- Garlic cloves–or use jarred minced garlic
- Beef broth–or water and Better than Bouillon
- Rigatoni–or ziti
- Tomato sauce
- Butter
- Heavy cream–or half-and-half
- Parmesan cheese
- Cornstarch–optional
Steps
Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Drain off excess grease.
Stir in the salt, pepper, Italian seasoning, garlic powder, onion powder and garlic.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
Sprinkle in the pasta. Pour tomato sauce over the top and add in the butter.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 2 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Stir some of the hot liquid (there should be a little liquid not absorbed by the pasta) it with the cream to temper it. Then stir the cream into the pot.
If you’d like to thicken the sauce you can make a cornstarch slurry. Turn your Instant Pot to the saute setting. In a small bowl stir together 1 Tbsp of cornstarch with 1-2 Tbsp of water, until smooth. Then pour the mixture into the Instant Pot. The cornstarch mixture will thicken up contents of pot quickly.
Turn off saute setting. Stir in the parmesan. Serve and enjoy.


Notes/Tips
- Serve with roasted broccoli, green beans or a salad.
- For more veggies, stir in a few handfuls of baby spinach after pressure cooking, or add frozen peas at the end and let them warm through.
- Store leftovers in an airtight container* in the refrigerator for 4 days. You can freeze it, although creamy pasta sauces and cooked pasta aren’t quite as good after freezing and thawing.
