Creamy Parmesan Beef Rigatoni with Garlic Butter Sauce

Description

An easy Instant Pot dinner made with seasoned ground beef, tender pasta, garlic and a creamy sauce.


Ingredients

Scale
  • 16 oz lean ground beef
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 4 garlic cloves, minced
  • 3 cups beef broth
  • 12 oz rigatoni
  • 8 oz tomato sauce
  • 1 Tbsp butter
  • 1/2 cup heavy cream
  • 1/2 cup shredded parmesan cheese
  • 1 Tbsp cornstarch

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Brown for 5 minutes. Drain off excess grease.
  2. Stir in the salt, pepper, Italian seasoning, garlic powder, onion powder and garlic.
  3. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  4. Sprinkle in the pasta. Pour tomato sauce over the top and add in the butter.
  5. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 2 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  6. Stir some of the hot liquid (there should be a little liquid not absorbed by the pasta) it with the cream to temper it. Then stir the cream into the pot.
  7. If you’d like to thicken the sauce you can make a cornstarch slurry. Turn your Instant Pot to the saute setting. In a small bowl stir together 1 Tbsp of cornstarch with 1-2 Tbsp of water, until smooth. Then pour the mixture into the Instant Pot. The cornstarch mixture will thicken up contents of pot quickly.
  8. Turn off saute setting. Stir in the parmesan. Serve and enjoy.
