Cozy Cabin Soup (Instant Pot or Crockpot)
My family was able to go up to our new cabin this week and it was so peaceful, restful and cozy. I loved it so much! I did a little cooking and this new recipe is one that I made while we were there. Even though it is summer I made soup. It’s fine, really you should try it. Soup is a perfect one pot meal that can feed a crowd. It comes out perfectly every time in the Instant Pot or slow cooker.
This cozy soup has beans, corn, rice, ground turkey and tomatoes. It’s sort of like taco soup but with a few twists (ranch dressing mix, rice and ranch style beans) . It tasted amazing with a little shredded cheese on top and some tortilla chips. Skyler put a dollop of sour cream on top of his bowl. I noticed the leftovers were better than the first day. This often happens with soup!
Ingredients/Substitution Ideas
- Ground turkey–or lean ground beef
- Onion–or you can use 1 Tbsp minced dry onion
- Dry ranch dressing mix–I used Hidden Valley brand
- Chicken or beef broth–or Better than Bouillon and water
- Long grain white rice–or you can use converted rice, basmati or jasmine rice with same cooking time. For brown rice you’ll need to increase cooking time to 22 minutes with a 10 minute natural pressure release.
- Canned corn–or an equivalent amount of frozen corn
- Ranch-style beans–or chili beans
- Crushed tomatoes–these are great for the texture of the soup. But if you can’t find them you can use diced tomatoes that have been pulsed a couple of times in the blender.
- Taco seasoning–if your soup needs more seasoning you can add more than 2 tablespoons. The Winco bulk taco seasoning is quite strong so 2 tablespoons was perfect for us.
Steps
Instant Pot Instructions:
- Brown the ground meat: Turn Instant Pot to sauté setting. When display says HOT add in the ground turkey and break it up. Add in the onions and ranch dressing mix. Brown for about 5 minutes.
- Deglaze the pot: Pour in the broth and scrape the bottom of the pot so that nothing is sticking. This will help prevent the burn error message.
- Add ingredients: Dump in the rice, corn, beans, tomatoes and taco seasoning. Don’t stir.
- Pressure cook: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes on LOW pressure (you can also use the SOUP button if your pot has one). When time is up let the pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Serve: Stir well. Ladle into bowls and serve with corn chips or tortilla chips and a dollop of sour cream.
Slow Cooker Instructions:
- Brown the ground meat: Brown the turkey with onions on the stove top and stir in the ranch dressing mix. Add to the slow cooker. You can also do this step in your crockpot if it has a saute or stovetop setting.
- Add ingredients: Stir in the broth, rice, corn beans, tomatoes and taco seasoning.
- Slow cook: Cover and cook on low for 6 hours or on high for 3-4 hours.
- Serve: Stir well. Ladle into bowls and serve with corn chips or tortilla chips and a dollop of sour cream.
Notes/Tips
- I like to serve this soup with some Fritos, sour cream and maybe some grated cheese on top. I also like to make a pan of cornbread and serve it with honey and butter.
- I used my 6 quart Instant Pot*. You can also make this in a 8 quart pot. Halve the recipe in the 3 quart pot.
- This soup can be gluten-free. Make sure your broth, taco seasoning, ranch mix and beans are labeled as such.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

2 cups of broth is good but Seems like this is missing additional water.
