Description
An easy one pot meal of soup with beans, corn, rice, tomatoes and ground turkey. A super easy, no fail recipe!

- 1 pound ground turkey
- 1 cup diced onion
- 2 Tbsp ranch dressing mix
- 2 cups chicken or beef broth
- 1/3 cup long grain white rice
- 1 (15.25 oz) can corn, drained
- 1 (15 oz) can ranch-style beans, don’t drain
- 1 (28 oz) can crushed tomatoes
- 2 Tbsp taco seasoning
Instructions
Instant Pot Instructions:
- Turn Instant Pot to sauté setting. When display says HOT add in the ground turkey and break it up. Add in the onions and ranch dressing mix. Brown for about 5 minutes.
- Pour in the broth and scrape the bottom of the pot so that nothing is sticking.
- Dump in the rice, corn, beans, tomatoes and taco seasoning. Don’t stir.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes on LOW pressure. When time is up let the pot sit for 5-10 minutes and then move valve to venting. Remove the lid.
- Stir well. Ladle into bowls and serve with corn chips or tortilla chips and a dollop of sour cream.
Slow Cooker Instructions:
- Brown the turkey with onions on the stove top and stir in the ranch dressing mix. Add to the slow cooker.
- Stir in the broth, rice, corn beans, tomatoes and taco seasoning.
- Cover and cook on low for 6 hours or on high for 3-4 hours.
- Stir well. Ladle into bowls and serve with corn chips or tortilla chips and a dollop of sour cream.
