Description

A one-pot Instant Pot pasta made with Italian sausage, vegetables, cavatappi, and a creamy tomato-cheese sauce.


Ingredients

Scale
  • 8 ounces Italian sausage
  • 1/2 cup diced onion
  • 4 ounces sliced mushrooms
  • 2 cups chicken broth
  • 8 ounces cavatappi pasta
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1 (15 oz) can crushed tomatoes
  • 1 carrot, peeled and shredded
  • 1 cup chopped spinach
  • 1/2 cup cottage cheese
  • 1/2 cup parmesan cheese

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion and mushrooms. Brown for 5 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 
  3. Sprinkle in the pasta. Dump in the garlic powder, onion powder, Italian seasoning, tomatoes and carrot. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Stir in the spinach, cottage cheese and parmesan cheese. Serve and enjoy!
