Description
A one-pot Instant Pot pasta made with Italian sausage, vegetables, cavatappi, and a creamy tomato-cheese sauce.

- 8 ounces Italian sausage
- 1/2 cup diced onion
- 4 ounces sliced mushrooms
- 2 cups chicken broth
- 8 ounces cavatappi pasta
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 1 (15 oz) can crushed tomatoes
- 1 carrot, peeled and shredded
- 1 cup chopped spinach
- 1/2 cup cottage cheese
- 1/2 cup parmesan cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the sausage and break it up. Add in the onion and mushrooms. Brown for 5 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the pasta. Dump in the garlic powder, onion powder, Italian seasoning, tomatoes and carrot.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir in the spinach, cottage cheese and parmesan cheese. Serve and enjoy!
