Christmas in July Casserole

Any time I eat an egg casserole I think of Christmas. It seems egg casseroles are a staple for Christmas morning. Well even though we’re in the middle of summer I wanted to try making this egg bake that is adapted from the Starbucks egg bites. You’ll blend the eggs with yogurt and cottage cheese. This gives the casserole a super creamy texture and lots of protein! It’s just Greg and me at the cabin this week so I made this casserole to serve only 3-4 people. But you can easily double this recipe to serve more people!

Ingredients/Substitution Ideas

  • Eggs
  • Cottage cheese
  • Plain greek yogurt
  • Garlic powder
  • Onion powder
  • Black pepper
  • Kosher salt
  • Cheddar cheese–or another kind of cheese like pepper jack
  • Tomatoes
  • Green onion

Steps

Heat oven to 350° F. Add eggs, cottage cheese, yogurt, garlic powder, onion powder, pepper and salt to a blender. Blend until smooth.

Spray a 10 inch oven safe skillet with non-stick cooking spray (or a square baking dish). Pour the egg mixture into the pan. Sprinkle in the cheese, tomatoes and green onions.

Bake for 20 minutes, or until eggs are set. Slice and serve.

Notes/Tips

  • Serve with toast and orange juice.
  • This recipe is gluten free and fairly low carb.
  • I used a 10 inch oven safe skillet.
  • The center should no longer jiggle and a knife inserted in the middle should come out clean. Depending on your oven, you might need a few extra minutes.
  • Try swapping the tomatoes for chopped spinach, bell peppers, or cooked mushrooms, or adding crumbled bacon or ham for a meatier version. If you do add bacon or ham I would reduce the amount of salt.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months. This is great for an easy breakfast. Warm up in 30 seconds in the microwave.

Ingredients

  • 1/3 cup plain greek yogurt

  • 1/2 cup shredded cheddar cheese
  • 1/3 cup diced tomatoes
  • 1 green onion, diced

Instructions

  5. Bake for 20 minutes, or until eggs are set. 
  6. Slice and serve. 

Notes

This recipe can easily be doubled. Double the ingredients. Increase cooking time by 5-10 minutes.

    Can this be cooked in a toaster oven?

      I am not sure! But I asked chat and this is what it said: Yes, this recipe can be cooked in a toaster oven, as long as your toaster oven:

      Can maintain a stable 350°F temperature

      Has enough room for the baking dish or skillet you’re using

      Heats relatively evenly (some toaster ovens have hot spots)

      Tips for toaster oven success:
      Use a smaller dish: Instead of a 10-inch skillet, opt for an 8×8-inch square baking dish, a pie plate, or even individual ramekins to fit your toaster oven better.

      Check early: Toaster ovens cook faster due to their compact size, so check for doneness around the 15-minute mark.

      Use an oven thermometer if you’re unsure how accurate your toaster oven is.

      Rotate halfway through baking if your toaster oven has uneven heat.

      As long as your pan fits and you keep an eye on it, it should turn out great!
