Description
An easy, high-protein and creamy egg bake with cheddar, tomatoes, and green onion.
Ingredients

- 3 eggs
- 1/3 cup cottage cheese
- 1/3 cup plain greek yogurt
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1/2 tsp kosher salt
- 1/2 cup shredded cheddar cheese
- 1/3 cup diced tomatoes
- 1 green onion, diced
Instructions
- Heat oven to 350° F.
- Add eggs, cottage cheese, yogurt, garlic powder, onion powder, pepper and salt to a blender. Blend until smooth.
- Spray a 10 inch oven safe skillet with non-stick cooking spray (or a square baking dish). Pour the egg mixture into the pan.
- Sprinkle in the cheese, tomatoes and green onions.
- Bake for 20 minutes, or until eggs are set.
- Slice and serve.
Notes
This recipe can easily be doubled. Double the ingredients. Increase cooking time by 5-10 minutes.
