Description

An easy, high-protein and creamy egg bake with cheddar, tomatoes, and green onion.


Ingredients

Scale
  • 3 eggs
  • 1/3 cup cottage cheese
  • 1/3 cup plain greek yogurt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp kosher salt
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup diced tomatoes
  • 1 green onion, diced

Instructions

  1. Heat oven to 350° F.
  2. Add eggs, cottage cheese, yogurt, garlic powder, onion powder, pepper and salt to a blender. Blend until smooth.
  3. Spray a 10 inch oven safe skillet with non-stick cooking spray (or a square baking dish). Pour the egg mixture into the pan. 
  4. Sprinkle in the cheese, tomatoes and green onions. 
  5. Bake for 20 minutes, or until eggs are set. 
  6. Slice and serve. 

Notes

This recipe can easily be doubled. Double the ingredients. Increase cooking time by 5-10 minutes.
