Egg Drop Soup in Instant Pot
This egg drop soup version is so simple and savory. It makes a perfect first course for an Asian dinner or if you’re in the mood for something light you can make it the main course. The Instant Pot makes this soup quickly and all in one pot.

- It’s easy to double or halve the recipe. Just adjust the ingredients and use the same pressure cooking time.
Ingredients and Substitution Ideas
- For this recipe I used 6 quart Instant Pot Duo 60 7 in 1*.
- 6 cups water
- 1 Tbsp Better than Bouillon Chicken Base–you can also use 3 cups of chicken broth in the place of 3 cups of water and 1 Tbsp of chicken base
- 1 Tbsp Better than Bouillon Vegetable Base–you can also use 3 cups of vegetable broth in the place of 3 cups of water and 1 Tbsp of vegetable base
- 1/2 to 3/4 tsp seasoned salt–depending on how salty you want your soup. Start with half a teaspoon and then add more if needed.
- 2 tsp ground ginger–you can also use 1 tablespoon of fresh minced ginger
- 1 tsp garlic powder
- 1/4 tsp white pepper–you can also use black pepper
- 3/4 tsp sesame oil–this is an important ingredient to develop the flavor
- 2 green onions or scallions, sliced
- Cornstarch (optional)–if you want a thicker broth you can use cornstarch to thicken. If you want less carbs than leave this out.
- 3 eggs
To make the soup recipe the main course you can make it even heartier by adding cooked chicken, tofu, corn, or noodles.
How to Make Egg Drop Soup (Instant Pot)
- Add ingredients into the pressure cooker: Add water into Instant Pot. Scoop the bouillon bases into the Instant Pot. Add in the seasoned salt, ginger, garlic powder, white pepper and sesame oil.
- Pressure cook with soup button: Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the SOUP button to 3 minutes (if you don’t have a soup button just use pressure cook button on high pressure). When time is up move valve back and forth between sealing and venting for 20 seconds and then move valve to venting and release the rest of the pressure. Remove the lid.
- Stir in the green onions/scallions.
- Thicken soup: If you’d like to thicken the soup make a cornstarch slurry by stirring 2 Tbsp of cornstarch with 2 Tbsp of cold water in a small bowl. Stir until smooth. Stir the mixture into the Instant Pot on the saute setting. Let the soup bubble and thicken for a few minutes. Then turn off Instant Pot.
- Add eggs: In a small bowl beat the eggs. Then pour the eggs into the Instant Pot and stir in with a rubber spatula for 1 minute so that the egg ribbons form.
- Serve: Ladle soup into bowls and serve topped with extra green onions or scallions, if desired.
Slow Cooker Egg Drop Soup Recipe Directions
- Add water into slow cooker. Scoop the bouillon bases into the slow cooker. Add in the seasoned salt, ginger, garlic powder, white pepper and sesame oil.
- If you’d like to thicken the soup make a cornstarch slurry by stirring 2 Tbsp of cornstarch with 2 Tbsp of cold water in a small bowl. Stir until smooth. Stir the mixture into the slow cooker.
- Cover and cook on low for 4-6 hours.
- Stir in the green onions/scallions.
- In a small bowl beat the eggs with a whisk. Then pour the eggs into the slow cooker and stir in with a rubber spatula for 1 minute so that the egg ribbons form.
- Ladle soup into bowls and serve topped with extra green onions or scallions, if desired.
What makes egg drop soup thick?
Egg drop soup broth is thickened with a cornstarch slurry. You can choose to use a cornstarch slurry to thicken your egg drop soup if you prefer or you can leave it out all together. A cornstarch slurry is made by stirring equal parts cornstarch with equal parts cold water until smooth. Then the slurry is stirred into the Instant Pot while it is on the saute setting. Stir the soup until it has thickened.
Is egg drop soup low carb?
If you leave out the cornstarch egg drop soup is low carb and keto friendly.
Is egg drop soup gluten free?
If you use a gluten free broth then egg drop soup is gluten free.
Is egg drop soup vegetarian?
You can use 6 cups of water and 2 Tbsp of vegetable base instead of the chicken base to make this soup vegetarian.
How to make egg ribbons?
The key element in egg drop soup is the egg ribbons that form. To make egg ribbons in your soup grab a rubber spatula. If you want large ribbons then quickly stir in the eggs with the spatula. Keep stirring for about 1 minute. If you add the egg slowly it will make small bits of egg. On the other hand, don’t just dump the eggs in or there won’t be ribbons at all.

This is, admittedly, a strange review. Ordinarily. I wouldn’t even need to look up a recipe for egg drop soup, which I’ve made on the stove using homemade broth , fresh ginger, etc. But as I am simultaneously in the middle of kitchen remodeling, a sore throat, and a non-cooking spouse (even with a working kitchen), this gave me a soothing soup with little work and almost no clean- up. I’m sure it would be great with homemade stock, fresh ginger, and added tofu cubes or vegetables, but I am reviewing it as I made it. A lot of reward for minimal effort.

An update– I passed this along to my daughter who needed ” something to make for dinner because work is crazy, my refrigerator is just about empty and I have no time to shop”. She had to substitute a little finely chopped onion for the green onion, and used her last 2 eggs instead of 3, but her ” empty cupboard had everything she needed to cook this soup.
