Cheesy Garlic Butter Chicken

Description

An easy 20-minute chicken dinner made with tender bites of chicken, garlic butter, herbs and melty mozzarella.


Ingredients

Scale
  • 16 oz boneless skinless chicken breasts
  • 2 Tbsp butter
  • 4 garlic cloves, minced
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 tsp dried thyme
  • 1/4 tsp rubbed sage
  • 1/4 tsp dried rosemary
  • 1/2 cup shredded whole milk mozzarella

Instructions

Stovetop Instructions:

  1. Slice the chicken across the grain, then cut the strips crosswise into ½-inch bite-size cubes.
  2. Heat a pan over medium high heat. Add in the butter and let it melt. 
  3. Add in the chicken and cook for about 5-7 minutes, stirring every couple minutes. Make sure cooked is cooked through and no longer pink in the middle. 
  4. Add in the garlic and toss in the butter and juices. 
  5. Stir in the salt, pepper, thyme, sage and rosemary. Toss well.
  6. Remove from the heat and stir in the mozzarella cheese.
  7. Serve and enjoy!

Slow Cooker Instructions:

  1. Slice the chicken across the grain, then cut the strips crosswise into ½-inch bite-size cubes. Add to the slow cooker.
  2. Melt the butter and stir it into the slow cooker.
  3. Stir in the garlic, salt, pepper, thyme, sage and rosemary.
  4. Cover and cook on low for 1 hour.
  5. Stir in the mozzarella and serve.
