Homemade French Onion Beef Casserole–an Instant Pot dinner with tender beef, caramelized onions, mushrooms, brown rice, and melty mozzarella and parmesan cheese.

Homemade French Onion Beef Casserole

Instant Pot Cheesy French Onion Beef Rice

If you’re a fan of French onion soup you might just like this beef and rice dish. The onions become sweet giving the dish those classic French onion soup flavors. The beef and rice become tender after cooking in the Instant Pot. The cheeses stirred in at the end melt right into the hot rice making everything creamy and cheesy without needing a heavy sauce. If you want to make this even better, try browning the beef a bit before adding the liquid for extra flavor.

Ingredients/Substitution Ideas

  • Butter
  • Yellow onion–or Vidalia onion
  • Baking soda
  • Mushrooms–or baby bella mushrooms
  • Beef stew meat
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Dried thyme
  • Dried parsley–or fresh parsley
  • Red wine vinegar–or balsamic vinegar
  • Worcestershire sauce–or soy sauce
  • Better than Bouillon
  • Water
  • Brown rice
  • Mozzarella cheese–or gruyere cheese
  • Parmesan cheese–or Romano cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onions and baking soda and stir until onions start to yellow. Add in the mushrooms. Saute for about 2 minutes. 

Stir in the beef, salt, pepper, garlic powder, thyme, parsley, vinegar, Worcestershire and Better than Bouillon to coat the beef.

Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 22 minutes. When time is up let pot sit for 10 minutes. Move valve to venting. Remove the lid.

Stir in the cheeses. 

Serve and enjoy!

Notes/Tips

  • Serve with a green salad, roasted green beans or asparagus. To add to the french onion vibe you can toast buttered baguette slices.
  • This recipe can be gluten free if you use gluten free Worcestershire sauce.
  • If you have a few extra minutes, brown the beef first before adding the onions. It adds even deeper flavor.
  • I used my 6 quart Instant Pot*. You can also make this in a 3, 4 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer. This dish freezes well. Let it cool completely and freeze for up to 3 months. Thaw overnight in the refrigerator and reheat gently.

Description

An Instant Pot dinner with tender beef, caramelized onions, mushrooms, brown rice, and melty mozzarella and parmesan cheese.


Ingredients

Scale
  • 2 Tbsp butter
  • 1 large yellow or Vidalia onion, thinly sliced
  • 1/2 tsp baking soda
  • 4 oz sliced mushrooms
  • 16 oz beef stew meat
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 tsp dried thyme
  • 1 tsp dried parsley
  • 1 1/2 tsp red wine vinegar
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp Better than Bouillon
  • 1 1/4 cups water
  • 1 cup brown rice
  • 2 oz shredded whole milk mozzarella cheese
  • 2 oz shredded parmesan cheese

Instructions

    Can I use white rice or will the cooking time mess that up?

      white rice only takes 5 minutes to cook and the beef takes 20 minutes…that’s why I paired it with the brown rice which has the longer cooking time. You could always add the rice in halfway through. That would work well.
