Chattahoochee Casserole–an easy Instant Pot rice dish with peas, carrots, pecans and raisins.

Chattahoochee Casserole

Today’s recipe is an interesting rice dish that seems a little odd when you read the ingredient list but somehow it all works and tastes good! It’s sort of like a rice pilaf but it has a sweet twist with raisins. I don’t usually love raisins but I did enjoy them in this dish.

This dish is quite versatile. Instead of raisins try using craisins. Try making this into a meal by adding in some chopped cooked chicken (I like Costco rotisserie chicken). If you’re not a fan of peas you can use another type of frozen vegetables. Pecans can be swapped with cashews for a crunchy element.

This recipe has been adapted from Chattahoochee rice on Cooks.com.

Ingredients/Substitution Ideas

  • Butter
  • Onions
  • Kosher salt
  • Carrots
  • Chicken broth–or vegetable broth
  • Parboiled rice–or long grain white rice, basmati, jasmine
  • Frozen peas
  • Raisins–or craisins
  • Pecans–or cashews, almonds, walnuts

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onions and saute for 3 minutes.

Add in the carrots and salt and saute for 2 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice. Then add in the peas and raisins.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. 

Stir in the pecans.

Serve and enjoy!

Notes/Tips

  • Serve as a side dish or as the main dish.
  • Try adding in some diced celery when you add in the carrots.
  • Make it with meat! You can add in some rotisserie chicken with this rice dish to make it more hearty and more of a full meal.
  • This recipe is gluten-free and can be dairy free if you use oil instead of butter.
  • I used my 3 quart Instant Pot*. You can also make this in a 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Another recipe you can make with raisins is Instant Pot Country Captain Chicken.
  • What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.

Ingredients

  • 1 Tbsp butter
  • 1/2 cup diced onions
  • 1 tsp kosher salt

    WHAT A SURPRISE!!! I wasn’t sure about this but was curious enough to give it a try. I highly recommend it! So easy and surprisingly delicious 😋 I cooked up a little bit of boneless chicken first and added it to the rice at the end. Thank you for another easy dinner to add to our rotation!
