Minnesota Casserole

As I cooked this recipe I was thinking “this is really strange.” The addition of a can of chicken noodle soup seemed liked a bizarre twist. However, I was pleasantly surprised with the results. The casserole was somewhat like a creamy rice-a-roni dish with ground beef and peas added in. This recipe was adapted from Krazy Kitchen Mom’s Minnesota Hot Dish and the author says, “Minnesota Hot Dish Recipe refers to any hot casserole made with meat and vegetables…if you are from Minnesota or North Dakota you certainly have had many hot dish recipes in church basements, at family gatherings, at school meeting, etc. It is the traditional family comfort food.” I hope you like this hot dish that you can make fast in your Instant Pot!

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7
  • Onion–yellow or white or 2 Tbsp dried onion
  • Celery
  • Garlic powder
  • Salt and pepper
  • Low sodium soy sauce
  • Water–or broth
  • Converted rice–or long grain white rice
  • Can of chicken noodle soup–I used Campbells brand
  • Cream of mushroom soup–or cream of celery
  • Peas–I used frozen peas that had thawed

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion, celery, garlic powder and a pinch of salt and pepper. Brown beef for about 5 minutes. Stir in the soy sauce. 

Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice.

Dump the chicken noodle soup and cream of mushroom soup on top. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir well. Fold in the peas. Serve and enjoy!

Notes/Tips

  • Serve with a side salad, roasted vegetables or fruit.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with peas are Instant Pot Chicken A La King and Instant Pot Brown Rice Pilaf.
  • What is converted/parboiled rice? Don’t confuse converted rice (or sometimes it is called parboiled rice) with pre-cooked or minute rice. Parboiled rice has been processed in its husk by soaking, steaming, and drying. As a result, all the nutrients from the husk are absorbed into the grain before it’s removed. The starch content alters in the process, making cooked parboiled rice less sticky than regular white rice. The rice kernels aren’t clumpy and glued together instead they are more separated. I found a bag of parboiled rice at Walmart next to the normal long grain white rice. Sometimes I buy it at Winco in the bulk section. I have also found it in the orange box (Ben’s brand) next to other rices.

Description

Ingredients

  • 1 pound lean ground beef
  • 1 cup diced onion
  • 2 ribs celery, diced
  • 1 1/2 tsp garlic powder
  • Salt and pepper
  • 3 Tbsp low sodium soy sauce
  • 1 1/2 cups water or broth
  • 1 1/2 cups converted rice
  • 1 (10.5 oz) can chicken noodle soup
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup peas (optional)

Instructions

    Oh Karen, I just served this up to my family and they are crazy over it!!! I had to use what I had on hand such as regular rice and Chicken Wonton soup replaced the Chicken Noodle. It did not mater one bit, this one will go into the dinner rotation. Thanks for the recipe, I’m always looking for something simple that I can make in a pinch, this fit the bill perfectly.

    Instead of using insta pot can a regular crockpot be used?
