Description

An easy Instant Pot rice dish with peas, carrots, pecans and raisins. 


Ingredients

Scale
  • 1 Tbsp butter
  • 1/2 cup diced onions
  • 1 tsp kosher salt
  • 2 carrots, peeled and sliced
  • 1 1/2 cups chicken or vegetable broth
  • 1 cup parboiled rice
  • 1 cup frozen peas
  • 1/4 cup raisins
  • 1/2 cup diced pecans

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onions and saute for 3 minutes. Add in the carrots and salt and saute for 2 minutes. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Sprinkle in the rice. Then add in the peas and raisins.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. 
  5. Stir in the pecans.
  6. Serve and enjoy!
