Description
An easy Instant Pot rice dish with peas, carrots, pecans and raisins.
Ingredients

- 1 Tbsp butter
- 1/2 cup diced onions
- 1 tsp kosher salt
- 2 carrots, peeled and sliced
- 1 1/2 cups chicken or vegetable broth
- 1 cup parboiled rice
- 1 cup frozen peas
- 1/4 cup raisins
- 1/2 cup diced pecans
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onions and saute for 3 minutes. Add in the carrots and salt and saute for 2 minutes.
- Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Sprinkle in the rice. Then add in the peas and raisins.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting.
- Stir in the pecans.
- Serve and enjoy!
