Cedric Adams Casserole–an easy dinner with all the flavors of stuffed cabbage rolls without the fuss. Ground beef, cabbage and tomatoes cook together in one pot with savory seasonings. Make it in your Instant Pot or slow cooker.

I found this recipe for Cedric Adams Casserole online and the recipe states, “You get no back talk from the cabbage, the caloric content is low and the whole thing is licken good.” I liked that description so I decided to give it a shot! It’s basically a cabbage roll casserole without the rice. It is perfect if you’re trying to eat lower carb and have a high protein meal. Or you can serve it over rice like I did! Make a big batch because the leftovers are incredible, and it freezes like a dream for those nights when you need dinner in a hurry.

Ingredients/Substitution Ideas

  • Lean Ground Beef–or ground turkey, ground pork
  • Diced Onion
  • Celery Rib–or a half cup of diced green bell pepper
  • Dash Seasoning
  • Kosher Salt
  • Beef Broth–or water and Better than Bouillon beef base
  • Shredded Cabbage
  • Tomato Sauce
  • Tomato Paste
  • Balsamic Vinegar

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onions and celery. Brown for 5 minutes. Drain off excess grease. Stir in the Dash seasoning and salt.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Dump cabbage on top evenly. Then pour in the tomato sauce, tomato paste and balsamic. 

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Stir. Serve plain, over rice or mashed potatoes.

Notes/Tips

  • Serve with crusty bread or garlic toast.
  • Try coleslaw mix if you don’t want to shred cabbage.
  • Dash seasoning is a salt-free seasoning blend. You can substitute with garlic powder, onion powder, and black pepper.
  • This recipe is gluten free and dairy free.
  • The cabbage will seem like a lot when you add it, but it cooks down significantly.
  • Keep it low carb by serving with cauliflower rice or mashed cauliflower.
  • I used my 4 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

  • 16 oz lean ground beef
  • 1 cup diced onion
  • 1 celery rib, sliced
  • 2 tsp Dash seasoning
  • 1 tsp kosher salt
  • 3/4 cup beef broth
  • 3 cups shredded cabbage
  • 8 oz tomato sauce
  • 2 Tbsp tomato paste
  • 1 tsp balsamic vinegar

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onions and celery. Brown for 5 minutes. Drain off excess grease. Stir in the Dash seasoning and salt.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Dump cabbage on top evenly. Then pour in the tomato sauce, tomato paste and balsamic. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 
  5. Stir. Serve plain, over rice or mashed potatoes. 

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions and celery. Brown for 5 minutes. Drain off excess grease. Stir in the Dash seasoning and salt. Transfer to the slow cooker.
  2. Stir in broth, cabbage, tomato sauce, tomato paste and balsamic. 
  3. Cover and cook on low for 4 hours. 
  4. Stir. Serve plain, over rice or mashed potatoes.

    Will it mess anything up if I sub apple cider vinegar for the balsamic?

      If you have red wine vinegar I might use that instead. But apple cider vinegar would probably be okay!

          Yum, and then some! So good. Red wine worked great. Only thing I did different was double the cabbage (we love that stuff) and add half a tsp of smoked paprika. Served it over mashed ‘taters. You hit that one right out of the ballpark! Thanks again!

    going to try this today
    using Italian sausage instead of ground beef. we enjoy the flavor of the sausage in many recipes like this. somewhat more flavorful. I am having knee replacement surgery tomorrow and making this soup for the week after. may add more to last most of the week. always enjoy your recipes. thanks Karen.
