Instant Pot Can’t Get Easier Casserole
With a handful of pantry-friendly ingredients and just a few minutes of effort you can have a hot and ready dinner! There is no chopping. Just a bit of browning and opening of cans. This recipe reminds me a bit of what my mom used to call “goulash” growing up. It tastes great and kids love it. It also makes good lunch leftovers for the next day (or breakfast if you’re like my son).
Ingredients/Substitution Ideas
- Ground turkey–or lean ground beef
- Dry onion–dehydrated onion flakes. I buy these at Costco in the big container.
- Kosher salt
- Garlic powder
- Italian seasoning
- Chicken broth–or water and Better than Bouillon chicken base
- Bay leaf
- Worcestershire sauce
- Rotini pasta–or another type of pasta
- Spaghetti sauce
- Corn–canned or frozen
- Shredded pizza blend cheese–or mozzarella
Steps
Turn Instant Pot to saute setting. When display says HOT add in the ground meat and break it up. Add in the dry onion, salt, garlic powder and Italian seasoning. Brown for about 5 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the bay leaf, Worcestershire, rotini, spaghetti sauce and corn. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 2 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir.

Sprinkle in the cheese.

Let the cheese melt. I used my air fryer lid to speed up the process. Serve and enjoy!

Notes/Tips
- Serve with garden salad and garlic bread.
- You can make this with other types of pasta. Some ideas are macaroni, penne, rigatoni, etc. Take the number on the back of the box and divide by 2 and subtract 1 to figure out how long to pressure cook different types of pastas.
- I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

- 1 pound ground turkey (or lean ground beef)
- 1 Tbsp dry onion
- 1 tsp kosher salt
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 2 cups chicken broth
- 1 bay leaf
- 1 Tbsp worcestershire sauce
- 8 oz rotini pasta
- 1 (24 oz) can spaghetti sauce
- 1 (15.25 oz) can corn, drained (or 1 1/2 cups frozen corn)
- 1/2 cup shredded pizza blend cheese
Instructions
- Turn Instant Pot to saute setting. When display says HOT add in the ground meat and break it up. Add in the dry onion, salt, garlic powder and Italian seasoning. Brown for about 5 minutes.
