Description

Smoked sausage, yellow potatoes, sweet corn, barbecue sauce and cheddar made in your Instant Pot or Crockpot.


Ingredients

Scale
  • 1 Tbsp olive oil
  • 6 ounces beef smoked sausage, sliced
  • 1/2 cup sliced onion
  • 2 cloves of garlic, minced
  • 1/2 cup chicken broth
  • 2 medium yukon gold potatoes (about 14 ounces), cut into half inch cubes
  • 1/2 tsp pepper
  • 1/4 tsp kosher salt
  • 1/4 cup barbecue sauce
  • 1/2 cup frozen sweet white corn
  • 1/2 cup shredded cheddar cheese

Instructions

Instant Pot Instructions:

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the smoked sausage and onion and saute for 4-5 minutes. Add in the garlic and saute for 30 seconds. 
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Evenly add in the potatoes. Sprinkle them with the pepper and salt. Dump in the barbecue sauce and corn. 
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5-10 minutes then move valve to venting. Remove the lid.
  5. Stir in the cheese. Serve and enjoy!

Slow Cooker Instructions:

  1. Add smoked sausage, onions, garlic, broth, potatoes, pepper, salt, bbq sauce and corn into slow cooker and stir. 
  2. Cover and cook on low for 4 hours, or until potatoes are soft.
  3. Stir in the cheese. Serve and enjoy!
