Bob Clark Casserole–a cozy Instant Pot casserole with layers of seasoned tangy BBQ ground beef, green beans, buttery mashed potatoes and melted cheddar.

Bob Clark Casserole
Today’s recipe is adapted from Bob Clark Casserole on Six Sisters Stuff. I changed it up to make it from start to finish in the Instant Pot. What a delicious meal! It’s sort of a cottage/shepherd’s pie type of meal. I was impressed by the yummy flavor of the ground beef with some different than usual additions like cumin and bbq sauce. This was all eaten up by Greg, Skyler, me and two friends. I will definitely make this one again.
Ingredients/Substitution Ideas
- Russet potatoes–or red, yukon gold
- Fresh green beans
- Butter
- Milk
- Kosher salt
- Black pepper
- Lean ground beef
- Onion
- Green bell pepper
- Seasoned salt
- Cumin
- Garlic salt
- Chili powder
- Tomato sauce
- Barbecue sauce–I used Sweet Baby Ray’s
- Cheddar cheese–I used sharp
Steps
Pour 1 ½ cups water into bottom of Instant Pot. Add potatoes into a steamer basket.

Lay a sheet of foil out and place the green beans in the middle fold up the edges of the foil to make a packet. Place the foil packet on top of the potatoes.


Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting and remove the lid.

Set foil packet aside. Place potatoes into a medium bowl. Discard the water in the Instant Pot. Mash the potatoes. Stir in the butter, milk, kosher salt and black pepper. Set aside.

Turn Instant Pot to saute setting (“more”). When display says HOT add in the beef and break it up. Add in the onions and green peppers. Cook until meat is cooked through and onions are soft. Drain off excess grease.

Stir in the seasoned salt, cumin, garlic salt, chili powder, tomato sauce and barbecue sauce. Cook until simmering and heated through. Turn off Instant Pot.

Spoon the green beans on top.

Then spoon the mashed potatoes over the top and smooth.

Sprinkle the cheese on top. If you have one, place an air fryer lid over the top and bake for 3 minutes at 400 degrees. If you don’t have an air fryer lid* then place the normal lid on top and turn on the keep warm setting and let the cheese melt for 5 minutes.


Serve and enjoy!


Notes/Tips
- This is a one pot meal but if you want something to serve on the side consider a fruit salad.
- This recipe can be gluten free. Just make sure to use a gluten free bbq sauce.
- I used my Duo Crisp 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- I used my silicone steamer basket*.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

This recipe reminded me of the Hamburger Pie recipe from old Better Homes and Gardens cookbooks. That recipe included only ground beef, onion, salt, pepper, mashed potatoes, a can of green beans (drained; skip the foil packet) and a can of tomato soup. No cheese. Baking or air frying would give a nice crust to the potatoes. A very quick, kid-friendly alternative. 😊

Question: Can I use frozen green beans to make this, and would that effect the cook time in any way??? 🤔
Yes you can! I would cook it the same way. Or forego the foil packet and just steam them in the microwave.
