Description
A cozy Instant Pot casserole with layers of seasoned tangy BBQ ground beef, green beans, buttery mashed potatoes and melted cheddar.

- 1 3/4 pound Russet potatoes, peeled and cubed
- 6 ounces fresh green beans, trimmed and cut into 1 inch pieces
- 3 Tbsp butter
- 1/4 cup milk
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 pound lean ground beef
- 1/2 cup finely diced onion
- 1/2 cup diced green bell pepper
- 1/2 tsp seasoned salt
- 1/2 tsp cumin
- 1/4 tsp garlic salt
- 1 tsp chili powder
- 1 (8 oz) can tomato sauce
- 1/4 cup barbecue sauce
- 1/2 cup shredded cheddar cheese
Instructions
- Pour 1 ½ cups water into bottom of Instant Pot. Add potatoes into a steamer basket and place into Instant Pot. Lay a sheet of foil out and place the green beans in the middle fold up the edges of the foil to make a packet. Place the foil packet on top of the potatoes.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting and remove the lid.
- Set foil packet aside. Place potatoes into a medium bowl. Discard the water in the Instant Pot. Mash the potatoes. Stir in the butter, milk, kosher salt and black pepper. Set aside.
- Turn Instant Pot to saute setting (“more”). When display says HOT add in the beef and break it up. Add in the onions and green peppers. Cook until meat is cooked through and onions are soft. Drain off excess grease.
- Stir in the seasoned salt, cumin, garlic salt, chili powder, tomato sauce and barbecue sauce. Cook until simmering and heated through. Turn off Instant Pot.
- Spoon the green beans on top. Then spoon the mashed potatoes over the top and smooth. Sprinkle the cheese on top. If you have one, place an air fryer lid over the top and bake for 3 minutes at 400 degrees. If you don’t have an air fryer lid* then place the normal lid on top and turn on the keep warm setting and let the cheese melt for 5 minutes.
