Beachcomber Casserole

Beachcomber Casserole

This is one of those recipes that you can easily scavenge random ingredients from a pantry or freezer and mix and match what you have on hand to create a comforting, delicious meal. It was an easy to make on pot meal that fed my hungry family. Enjoy!

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey, pork, chicken
  • Onion–or shallot
  • Kosher salt
  • Black pepper
  • Garlic powder–or fresh garlic
  • Beef broth–or water and Better than Bouillon beef base
  • Elbow macaroni–or shells
  • Rotel–or diced tomatoes and a can of diced green chiles
  • Frozen sweet corn–or canned corn
  • Tomato sauce–or tomato soup
  • Sugar
  • Cheddar cheese–or another type of cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the ground beef and onion. Brown for about 5 minutes. Stir in the salt, pepper and garlic powder. 

Pour in the beef broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the macaroni. Dump in the Rotel, corn, tomato sauce and sugar.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 5-10 minutes and then move valve to venting. Remove the lid. 

Stir in the cheese.

Serve and enjoy!

Notes/Tips

  • Serve with garlic bread and green beans.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • This recipe can easily be doubled or halved. Adjust ingredients, keep same cooking time.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
  • If you use another type of pasta you may need to adjust the cooking time. Here is the formula: look at the back of the box of pasta and see how many minutes it says to boil the pasta. If it’s 10 minutes you divide that number by 2 (=5) and then subtract 2 minutes. So you would pressure cook for 3 minutes. I usually use a 5-10 minute natural pressure release for pasta.

  • The original casserole had diced green bell pepper and olives in it. Add if you’d like.

Description

Instant Pot beef and macaroni with Rotel, corn and cheddar.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1 cup diced onion
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 2 cups beef broth
  • 6 ounces elbow macaroni
  • 1 (10 oz) can Rotel
  • 1 cup frozen sweet corn
  • 2 (8 oz) cans tomato sauce
  • Pinch of sugar
  • 1 cup shredded cheddar cheese

    Hello, on the beach commercial recipe do you put the elbow pasta in cooked already or just put in right out of the box. thanks
