Buttery Chicken Bites Recipe
I whipped this up for an easy dinner and we all loved it so much! The flavor was so yummy and there’s plenty of protein that filled us up. This recipe works so well because it uses simple ingredients that most people already have. You can be eating this chicken within 20 minutes. It’s so fast and easy to come together. Cutting the chicken across the grain into small cubes makes a huge difference in tenderness, so every piece turns out juicy instead of chewy. Try this out for a fast and easy dinner tonight and save the leftovers for lunch tomorrow 🙂
Ingredients/Substitution Ideas
- Boneless skinless chicken breasts–or chicken tenderloins
- Olive oil–or avocado oil
- Kosher salt–or sea salt
- Black pepper
- Garlic powder
- Onion powder
- Paprika
- Butter
- Honey
- Cornstarch
Steps
Slice the chicken across the grain, then cut the strips crosswise into ½-inch bite-size cubes. Cutting across the grain shortens the muscle fibers and helps keep the chicken tender.


Heat a large pan over medium high heat. Add in the olive oil and swirl around. Add in the chicken.
Sprinkle in the salt, pepper, garlic powder, onion powder and paprika. Saute chicken until cooked through.

Add in the butter and honey and cook until melted and incorporated.

If you want a thicker sauce then make a cornstarch slurry by stirring together 1 Tbsp of cornstarch with 1 Tbsp of cold water until smooth. Stir the mixture into the pan and stir until sauce thickens.
Remove from heat. Serve and enjoy!

Notes/Tips
- I served this with baked potatoes and raw veggies and dip. This would also be good with rice, mashed potatoes or just with steamed vegetables.
- This recipe is gluten free.
- Make sure to cut the chicken across the grain so that the chicken can be as tender as possible. Slice across the grain. Then cut each of those wider strips crosswise into bite size cubes. All muscle has a grain to it. The placement of your knife to this grain will determine the length of the muscle fibers in an individual slice of meat, which in turn will have a profound effect on how tender or tough that meat is.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days. You can freeze the cooked chicken for up to 2 months. Thaw in the refrigerator overnight and reheat in a pan.
