Description

A simple but delicious meal of ground beef with onions, carrots, potatoes and cheese. Make it in the slow cooker or the Instant Pot.


Ingredients

Scale
  • 1 pound lean ground beef
  • 1/2 cup diced onion
  • 1 carrot, shredded
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 3 medium Yukon gold potatoes, thinly sliced
  • 1/4 cup ketchup
  • 1/2 cup shredded cheddar cheese

Instructions

Slow Cooker Instructions:

  1. Heat a pan over medium high heat. Add in the ground beef and break it up. Add in the onions and carrots. Brown for about 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and smoked paprika. Transfer to the slow cooker. 
  2. Stir in the potatoes and ketchup. 
  3. Cover slow cooker and cook on low for 3-4 hours. 
  4. Sprinkle the cheese on top and let it melt. Serve and enjoy!

Instant Pot Instructions:

  1. Pour 1 ½ cups of water into bottom of Instant Pot. In a steamer basket add the potatoes. Place steamer basket into the Instant Pot. 
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting. Remove the lid.
  3. Move steamer basket out of the Instant Pot. Discard the liquid. 
  4. Turn Instant Pot to saute setting. When display says HOT add in the ground beef, onions and carrots. Cook until meat is browned and the onions are soft. Drain off excess grease.
  5. Stir in the salt, pepper, garlic powder, smoked paprika, potatoes and ketchup. 
  6. Sprinkle the cheese on top and let it melt.
  7. Serve and enjoy!
