Stuck in a bad mood? Yeah, it happens to the best of us. One thing that helps me is food 😉 Comforting, delicious dinner food with cheese on top of it. This cabbage pasta and beef casserole was a definite winner at my house and I think you’ll love it too. The cabbage is shredded and then cooked down so those picky eaters won’t even notice that it is there. I love using my Instant Pot for this one pot meal…fewer dirty dishes to clean also helps me out of a bad mood!

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Dry minced onion
  • Cabbage
  • Kosher salt
  • Black pepper
  • Garlic powder
  • Italian seasoning
  • Beef broth-or water and Better than Bouillon
  • Egg noodles
  • Pasta sauce–I like Mezzetta brand
  • Cheddar cheese–I like sharp cheddar

Steps

Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion.

Brown for about 3 minutes and then stir in the cabbage, salt, pepper, garlic powder and Italian seasoning. Cook for another 3 minutes.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Sprinkle in the egg noodles and then spoon the pasta sauce evenly over the noodles.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let the pot sit for 5-10 minutes and then move valve to venting. Remove the lid.

Stir in half the cheese. Sprinkle the remaining cheese on top and let it melt. 

Serve and enjoy!

Notes/Tips

  • Serve with a side of garlic toast and a green salad.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 1 pound lean ground beef
  • 1 Tbsp dry onion
  • 6 cups shredded cabbage
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 cups beef broth
  • 8 ounces egg noodles
  • 1 (25 oz) jar pasta sauce
  • 1 cup shredded cheddar cheese

Instructions

    I don’t have an instant pot. Can I use a crock pot or dutch oven?

      I don’t either and sad when recipe looks good but then have to figure out a way to make it in crock pot

      I haven’t tried it with another method but I think you could easily make this on the stove top in a dutch oven.
      1. Heat dutch oven over medium high heat. Add in the beef and break it up. Add in the onion. Brown for about 3 minutes and then stir in the cabbage, salt, pepper, garlic powder and Italian seasoning. Cook for another 3 minutes.
      2. Pour in the broth and scrape bottom of pot so that nothing is sticking.
      3. Stir in the egg noodles and pasta sauce.
      4. Cover the dutch oven and bake at 350 for 30-45 minutes.
      5. Remove the lid. Stir in half the cheese. Sprinkle the remaining cheese on top and let it melt.
      6. Serve and enjoy!

      My only concern is that there won’t be enough broth to cook the noodles. You may want to add in an extra 1/2 cup.
