Awesome Casserole–a healthy and delicious cauliflower dish made with the help of your Instant Pot.

Awesome Casserole
This dish is awesome because it makes a plate of vegetables something you’ll want to scarf down. I almost ate the whole pot by myself. Plus it’s much healthier than a normal creamed cauliflower. Because plain greek yogurt is used it has 9 grams of protein per serving and only 110 calories. You will probably want to double the recipe!
Ingredients/Substitution Ideas
- Cauliflower
- Milk–or evaporated milk, half and half
- Onion powder
- Garlic powder
- Kosher salt
- Black pepper
- Red pepper flakes
- Flour
- Plain full fat greek yogurt
- Parmesan reggiano
Steps
Pour 1 ½ cups of water into bottom of Instant Pot. Add cauliflower into a steamer basket. Drop the basket into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up move valve to venting and remove the lid.

Move the steamer basket out of the pot and set aside. Discard the water.
Turn Instant Pot to saute setting (“less” setting). Pour in the milk, onion powder, garlic powder, salt, pepper, red pepper. Whisk in the flour until it thickens the milk. Stir in the yogurt and warm through.

Fold in the cauliflower. Turn off Instant Pot.

Sprinkle with parmesan cheese. Serve and enjoy!

Notes/Tips
- Serve as a side dish to any meal.
- This dish will go quick! You can easily double it. Double all ingredients, keep cooking time the same. Don’t double the amount of water below the steamer basket.
- Try topping with buttered crispy browned panko breadcrumbs.
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- I used my silicone steamer basket*.
- Store leftovers in an airtight container* in the refrigerator for up to 3 days.
