Awesome and Easy Creamy Corn Casserole

This one is easy to make…just one bowl, no mixer and then straight to the oven. The texture is tender with little bursts of sweet corn and flavor from the green chiles. The sour cream and butter keep everything rich and moist. I adapted this recipe from All Recipes. The original recipe has over 3100 reviews. I took some of the ideas in the reviews to make this recipe my own. I hope you like it!

Ingredients/Substitution Ideas

  • Cornmeal
  • Flour
  • White sugar
  • Baking powder
  • Salt
  • Corn–canned or frozen
  • Sour cream–or plain Greek yogurt
  • Butter
  • Eggs
  • Half and half–or milk or heavy cream
  • Diced green chiles–or chopped jalapeños (for more heat)
  • Pepper jack cheese–or cheddar cheese

Steps

Heat oven to 350° F. 

In a mixing bowl whisk together the cornmeal, flour, sugar, baking powder and salt. 

Add in the corn, sour cream, melted butter, eggs, half and half, green chiles and pepper jack. Stir until combined. 

Spray a 8×8 inch baking dish with non stick cooking spray. Spread the corn mixture into the pan.

Bake for 55-60 minutes in a metal pan and 5-10 minutes longer in a glass pan.

Serve and enjoy!

Notes/Tips

  • Serve with chili, soups, BBQ chicken or pulled pork.
  • I used my 8×8 inch metal baking dish*. I ordered this one because it doesn’t rust or warp like my other pans have in the past. I like it a lot so far!
  • For the best results, don’t overmix the batter.
  • For a crispier edge, bake in a metal pan (it really does make a difference).
  • Store leftovers covered in the refrigerator for up to 4 days. Reheat in the microwave or warm in the oven for best texture. To freeze: wrap tightly and freeze for up to 2 months, then thaw and reheat.
  • You can double the recipe and bake in a 9×13 pan.

Ingredients

Scale
  • 3/4 cup cornmeal
  • 1/2 cup flour
  • 1/4 cup white sugar
  • 1 Tbsp baking powder
  • 1/4 tsp salt
  • 2 cups corn (canned or frozen and thawed)
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 2 eggs, lightly beaten
  • 1/2 cup half and half
  • 1 (4 oz) can diced green chiles
  • 1 cup shredded pepper jack cheese

Instructions

  1. Heat oven to 350° F. 
  2. In a mixing bowl whisk together the cornmeal, flour, sugar, baking powder and salt. 
  3. Add in the corn, sour cream, melted butter, eggs, half and half, green chiles and pepper jack. Stir until combined.
