Description
Moist and flavorful cornbread is packed with sweet corn, creamy sour cream, melty pepper jack cheese and mild green chiles for the perfect savory side dish.

- 3/4 cup cornmeal
- 1/2 cup flour
- 1/4 cup white sugar
- 1 Tbsp baking powder
- 1/4 tsp salt
- 2 cups corn (canned or frozen and thawed)
- 1 cup sour cream
- 1/2 cup melted butter
- 2 eggs, lightly beaten
- 1/2 cup half and half
- 1 (4 oz) can diced green chiles
- 1 cup shredded pepper jack cheese
Instructions
- Heat oven to 350° F.
- In a mixing bowl whisk together the cornmeal, flour, sugar, baking powder and salt.
- Add in the corn, sour cream, melted butter, eggs, half and half, green chiles and pepper jack. Stir until combined.
- Spray a 8×8 inch baking dish with non stick cooking spray. Spread the corn mixture into the pan.
- Bake for 55-60 minutes in a metal pan and 5-10 minutes longer in a glass pan.
