Description

Moist and flavorful cornbread is packed with sweet corn, creamy sour cream, melty pepper jack cheese and mild green chiles for the perfect savory side dish.


Ingredients

Scale
  • 3/4 cup cornmeal
  • 1/2 cup flour
  • 1/4 cup white sugar
  • 1 Tbsp baking powder
  • 1/4 tsp salt
  • 2 cups corn (canned or frozen and thawed)
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 2 eggs, lightly beaten
  • 1/2 cup half and half
  • 1 (4 oz) can diced green chiles
  • 1 cup shredded pepper jack cheese

Instructions

  1. Heat oven to 350° F. 
  2. In a mixing bowl whisk together the cornmeal, flour, sugar, baking powder and salt. 
  3. Add in the corn, sour cream, melted butter, eggs, half and half, green chiles and pepper jack. Stir until combined. 
  4. Spray a 8×8 inch baking dish with non stick cooking spray. Spread the corn mixture into the pan.
  5. Bake for 55-60 minutes in a metal pan and 5-10 minutes longer in a glass pan.
  6. Serve and enjoy!
