Amish Supreme Casserole–a one-pot Instant Pot pasta made with tender chicken thighs, elbow macaroni, and a rich blend of cheeses and savory seasonings.

Instant Pot Amish Supreme Casserole

Amish Supreme Casserole

This recipe is adapted from Amish Chicken Supreme Casserole on Amish 365. My version uses the Instant Pot and swaps out the processed ingredients for a more homemade version. My boys took this one down! They loved the creamy sauce, the tender bites of chicken and of course the cheese. You can easily add in some peas, broccoli or spinach for some greens. Enjoy!

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon
  • Elbow macaroni–or cavatappi
  • Boneless skinless chicken thighs–or chicken breasts
  • Kosher salt
  • Garlic powder
  • Celery salt
  • Black pepper
  • Dried parsley
  • Nutmeg
  • Onion powder
  • Smoked paprika
  • Poultry seasoning
  • Cream cheese–or Velveeta
  • Milk–or evaporated milk, half and half, cream
  • Cheddar–or sharp cheddar
  • Parmesan

Steps

Pour broth into Instant Pot. Sprinkle in the macaroni. Add chicken evenly over the top of the pasta. Sprinkle the chicken with all the seasonings (salt, garlic powder, celery salt, pepper, parsley, nutmeg, onion powder, paprika and poultry seasoning). Dump the cream cheese on top.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minute and then move valve to venting. Remove the lid.

Stir in the milk. Sprinkle the cheeses on top and let it melt. 

Serve and enjoy.

Notes/Tips

  • Serve with a green salad or some green beans and garlic bread.
  • Adjust milk to your preferred creaminess. Start with 1/4 cup and add more if you want a looser, saucier finish.
  • Stir in thawed peas, baby spinach, or steamed broccoli at the end for extra color and nutrition.
  • Use freshly grated cheese. It melts better than pre-shredded and avoids that powdery coating that can make sauces grainy.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • You can easily double this recipe. Double all ingredients and keep the cooking time the same.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.

Ingredients

Scale
  • 2 cups chicken broth
  • 8 oz elbow macaroni
  • 20 oz boneless skinless chicken thighs, trimmed of fat and cut into bite size pieces
  • 3/4 tsp kosher salt
  • 1 tsp garlic powder
  • 1/4 tsp celery salt
  • 1 tsp black pepper
  • 1 tsp dried parsley
  • Pinch of nutmeg
  • 1/2 tsp onion powder
  • Dash of smoked paprika
  • 1/2 tsp poultry seasoning
  • 4 oz cream cheese
  • 1/4–1/2 cup milk
  • 1/2 cup shredded cheddar
  • 1/4 cup shredded parmesan

Instructions

    This was awesome and so darn easy! Some spices I had to substitute because I thought I had them on hand but I didn’t. You could use any combination and it would still be perfect. I would just suggest more cheese after plating.
