Community Casserole–an Instant Pot chicken and noodle casserole with mushrooms, sour cream, and a crispy Ritz cracker topping.

Community Casserole
Whether you’re bringing this to the church potluck or the family dinner this casserole is going to be a favorite. It’s got a creamy dreamy sour cream based sauce, crispy ritz cracker topping, tender bites of chicken, and noodles you’ll just want to slurp up. Greg and I took this one down! This recipe is adapted from Church Chicken Casserole on Simply Recipes.
Ingredients/Substitution Ideas
- Butter
- Mushrooms
- Boneless skinless chicken thighs–you can also use boneless skinless breasts
- Kosher salt
- Black pepper
- Onion power
- Garlic powder
- Chicken broth–or water and Better than Bouillon chicken base
- Egg noodles
- Hot sauce–optional
- Cornstarch
- Sour cream–or plain greek yogurt
- Ritz crackers–or club crackers
Steps
Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the mushrooms and saute for 3 minutes. Add in the chicken and saute for 2 minutes. The chicken won’t be cooked through. Stir in the salt, pepper, onion powder and garlic powder.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the egg noodles and press to submerge (all noodles won’t be submerged and that’s okay).

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 1 minute. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the hot sauce.
Turn Instant Pot to saute setting. Stir together cornstarch together with 1 Tbsp of cold water until smooth. Stir the slurry into the pot to thicken the sauce. Once thickened turn off Instant Pot.

Stir in the sour cream.

Stir crushed crackers with the 2 Tbsp of melted butter. Sprinkle over the noodles in the pot.

Place air fryer lid on top and air fry at 400° F for 3 minutes. If you don’t have an air fryer lid then place the Instant Pot stainless steel liner under your oven’s broiler for 3 minutes.


Serve and enjoy!

Notes/Tips
- Serve with a cucumber and tomato salad to bring some color and brightness.
- Trim excess fat from the thighs before cutting to help keep the dish from becoming too greasy.
- No need to fully cook the chicken in the sauté step. It will finish during pressure cooking and stay tender.
- If using a broiler instead of an air fryer lid, keep a close eye on it. 3 minutes go fast and it can burn.
- I used my Duo Crisp 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

I don’t have an air fryer. Do I need to buy a special lid to put on my 8 qt instant pot? I’m really new at this, and didn’t know that I could air fry in my insta pot. Thanks for getting back to me as I would really to try your receipt, Thanks again. Virginia
You don’t need to buy anything extra. Just some instant pots come with the air fryer lid. You can use your stainless steel pot in the oven if you want to finish off casseroles. That works pretty great.
