Description

A one-pot Instant Pot pasta made with tender chicken thighs, elbow macaroni, and a rich blend of cheeses and savory seasonings.


Ingredients

Scale
  • 2 cups chicken broth
  • 8 oz elbow macaroni
  • 20 oz boneless skinless chicken thighs, trimmed of fat and cut into bite size pieces
  • 3/4 tsp kosher salt
  • 1 tsp garlic powder
  • 1/4 tsp celery salt
  • 1 tsp black pepper
  • 1 tsp dried parsley
  • Pinch of nutmeg
  • 1/2 tsp onion powder
  • Dash of smoked paprika
  • 1/2 tsp poultry seasoning
  • 4 oz cream cheese
  • 1/4-1/2 cup milk
  • 1/2 cup shredded cheddar
  • 1/4 cup shredded parmesan

Instructions

  1. Pour broth into Instant Pot. Sprinkle in the macaroni. Add chicken evenly over the top of the pasta. Sprinkle the chicken with all the seasonings (salt, garlic powder, celery salt, pepper, parsley, nutmeg, onion powder, paprika and poultry seasoning). Dump the cream cheese on top.
  2. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minute and then move valve to venting. Remove the lid.
  3. Stir in the milk. Sprinkle the cheeses on top and let it melt. 
  4. Serve and enjoy.
