Description
Old fashioned eggs noodles with chicken, spinach, mushrooms and parmesan cheese. Made fast in the Instant Pot.
Ingredients

- 2 Tbsp butter
- 4 oz mushrooms, quartered
- 2 cups water
- 1 Tbsp Better than Bouillon chicken base
- 8 oz old fashioned egg noodles (I used Mrs Miller's brand, see photo above)
- 1/2 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 cups cooked chopped chicken
- 1/3 cup shredded parmesan cheese
- 2 cups chopped spinach
- 1/4 cup heavy cream
Instructions
- Turn Instant Pot to saute setting. Add in the butter and let it melt. Add in the mushrooms and saute for 4 minutes.
- Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
- Stir in the bouillon. Sprinkle in the noodles. Then add in the salt, pepper, garlic powder, onion powder and chicken.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir in the parmesan, spinach and cream.
- Serve and enjoy!
