Description

Old fashioned eggs noodles with chicken, spinach, mushrooms and parmesan cheese. Made fast in the Instant Pot. 


Ingredients

Scale
  • 2 Tbsp butter
  • 4 oz mushrooms, quartered
  • 2 cups water
  • 1 Tbsp Better than Bouillon chicken base
  • 8 oz old fashioned egg noodles (I used Mrs Miller's brand, see photo above)
  • 1/2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 cups cooked chopped chicken
  • 1/3 cup shredded parmesan cheese
  • 2 cups chopped spinach
  • 1/4 cup heavy cream

Instructions

  1. Turn Instant Pot to saute setting. Add in the butter and let it melt. Add in the mushrooms and saute for 4 minutes. 
  2. Pour in the water and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Stir in the bouillon. Sprinkle in the noodles. Then add in the salt, pepper, garlic powder, onion powder and chicken.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Stir in the parmesan, spinach and cream.
  6. Serve and enjoy!
