Description
Instant Pot creamy cheesy delightful potatoes that are loaded with flavor. These potatoes are a perfect side dish!
Ingredients

- 3 large Russet potatoes
- 4 Tbsp butter
- 1/2 cup milk
- 1 cup shredded cheddar Monterey jack blend
- 1/2 cup sour cream
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 2 green onions, sliced
Instructions
- Add 1 ½ cups of water to Instant Pot. Add in a trivet. Wash potatoes and place them on the trivet.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 20 minutes. When time is up you can release pressure immediately or wait until you’re ready to serve the potatoes.
- Remove the lid. Remove potatoes and trivet and discard the water.
- Turn Instant Pot to sauté setting. Add in the butter and let it melt. Add in the milk. Stir in the cheese and let it melt. Stir in the sour cream, salt, pepper and green onions.
- Turn off heat. Grate the potatoes into the sauce and fold in.
- Serve immediately.
Notes
This recipe can easily be doubled. Double ingredients, same cooking time.
