Alabama Chicken Soup

Alabama Chicken Soup–a different but delicious take on chicken soup. It’s made with tender chicken, vegetables, tomato sauce, and a little kick of hot sauce, all cooked quickly in the Instant Pot or low and slow in the crockpot.

This is a dump everything into the pot and walk away type of recipe. If you’re a fan of chicken soups and you’re thinking you want the comforting vibe but also not too heavy…this soup is perfect. It’s got the most delicious broth. I was drinking it by itself! This is a small batch soup which was nice for the 3 people that ate it at my house. You can always double it if you’d like too. This can be a great “clean out the fridge” soup too. Enjoy!

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Chicken tenderloins–or boneless skinless chicken breasts or thighs
  • Onion–or shallot
  • Celery
  • Garlic cloves–or 1 tsp garlic powder
  • Carrot
  • Potato
  • Tomato sauce–or crushed tomatoes
  • Frozen corn–or canned corn, drained
  • Worcestershire sauce
  • Kosher salt
  • Black pepper–or white pepper
  • Hot sauce–or a pinch of red pepper flakes

Steps

Turn Instant Pot to sauté setting. Add in the broth and let it heat up while you prep all the other ingredients.

Add in all the other ingredients once broth is simmering.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP button (or low pressure) to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Break up the chicken or shred it. 

Ladle into bowls and serve.

Notes/Tips

  • Serve with crusty bread, grilled cheese sandwiches, cornbread or crackers.
  • Try making this soup heartier by adding another potato, tossing in some frozen peas or stir in cooked rice right before serving.
  • Heating the broth first on sauté helps everything come to pressure faster.
  • This recipe can be gluten free if you use gluten free Worcestershire sauce. This recipe is dairy free.
  • I used my 3 quart Instant Pot*. You can also make this in a 4, 6 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. This soup freezes well. Let it cool completely, then freeze in freezer-safe containers for up to 3 months. Thaw overnight in the fridge and reheat gently.

Description

Ingredients

Scale
  • 4 cups chicken broth
  • 16 oz chicken tenderloins (or chicken cut into 1 inch cubes)
  • 1/2 cup diced onion
  • 1 rib of celery, diced
  • 3 garlic cloves, minced
  • 1 carrot, peeled and sliced
  • 1 medium potato, peeled and cut into 1/2 inch cubes
  • 1 (8 oz) can tomato sauce
  • 1/2 cup frozen corn
  • 1 tsp Worcestershire sauce
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp hot sauce

Instructions

Instant Pot Instructions:

  2. Cover and cook on low for 3 hours, or until potatoes are tender.
  3. Break up the chicken or shred it.
  4. Ladle into bowls and serve.

    I am disappointed that you no longer tell us the calorie and carb count of your recipes. We cannot make an informed choice without that. Please consider doing this for us again.

      I am not sure why you can’t see it but on my screen underneath the recipe card I can see nutrition info.
