A Few of My Favorite Things Casserole

Instant Pot beef gyro bowls have a few of my favorite things! With tender bites of seasoned beef, diced tomatoes, pita, feta and tzatziki sauce you can’t go wrong.

Instant Pot Beef Gyro Bowls

A few of my favorite things are anything remotely resembling greek food…the tzatziki (cucumber yogurt sauce), feat cheese, spiced meat, pita! I love it all. This meal is a perfect for feeding a family because everyone can customize their own plate with what they like best.

Ingredients/Substitution Ideas

  • Beef stew meat–or roast cut into bite size pieces or strips
  • Olive oil
  • Onion
  • Garlic cloves
  • Oregano
  • Cumin
  • Paprika
  • Cinnamon
  • Kosher salt
  • Black pepper
  • Juice of a lemon
  • Beef broth–or water and Better than Bouillon beef base
  • Red wine vinegar–or white wine vinegar
  • Sliced pitas or naan dippers–I get these at Costco and warm them up or toast them
  • Tomatoes
  • Feta cheese
  • Plain greek yogurt–I like 2%
  • Cucumber
  • Dried dill

Steps

Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the beef. Brown on all sides (about 5 minutes), then stir in the onion and garlic. Cook another 2 minutes. (sometimes I do this step on the stove instead)

Stir in the oregano, cumin, paprika, thyme, cinnamon, salt, and pepper to coat the beef.

Pour in beef broth, lemon juice, and vinegar. Scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 25 minutes. When time is up let pot sit for 15 minutes and then move valve to venting and remove the lid.

Make the tzatziki sauce by stirring together all ingredients. 

Serve the beef with pita, tomatoes, feta and tzatziki. 

Notes/Tips

  • Serve with hummus and raw veggies or a simple greek salad.
  • To make a simple Greek salad, combine 2 cups of chopped cucumber, 2 cups of chopped tomatoes or halved cherry tomatoes, 1/2 a thinly sliced red onion, and 1 sliced green bell pepper (optional) in a large bowl. Add 1/2 cup of Kalamata olives and 1/2 cup of cubed or crumbled feta cheese. In a small bowl, whisk together 3 tablespoons of olive oil, 1 tablespoon of red wine vinegar, 1 minced garlic clove, and a pinch of salt and black pepper. Pour the dressing over the salad, toss gently to combine, and sprinkle with dried oregano to taste. Serve chilled or at room temperature as a fresh, tangy side dish.
  • Use fresh lemon juice! It so bright and adds so much flavor.
  • Let the tzatziki sit for 10–15 minutes if you can to help the flavors marry.
  • This meal can be gluten free if you don’t serve with pita. Serve with a scoop of lemon rice instead.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot. Feel free to double this recipe to serve more people.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Ingredients

  • 1 1/2 pounds beef stew meat
  • 2 tsp olive oil
  • 1 small onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/4 tsp cinnamon
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • Juice of 1 lemon
  • 1/2 cup beef broth
  • 1 Tbsp red wine vinegar
  • Sliced pitas or naan dippers (I get these at Costco)
  • Diced tomatoes
  • Feta cheese

Tzatziki:

  • 1/2 cup plain greek yogurt
  • 1/2 cup diced peeled, seeded cucumber
  • 1 1/2 tsp dried dill
  • 1/4 tsp kosher salt
  • 1 garlic clove, minced
  • 1 tsp olive oil
  • 1 tsp lemon juice

Instructions

    Oh wow, this sounds absolutely incredible! I’m a huge fan of anything with those fresh Greek flavors, and the idea of making it an Instant Pot “casserole” with all those delicious toppings is just genius. The combination of seasoned beef, creamy tzatziki, and salty feta sounds like a dream. I can almost taste it!
