Description

With tender bites of seasoned beef, diced tomatoes, pita, feta and tzatziki sauce you can’t go wrong.


Ingredients

Scale
  • 1 1/2 pounds beef stew meat
  • 2 tsp olive oil
  • 1 small onion, thinly sliced
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/4 tsp cinnamon
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • Juice of 1 lemon
  • 1/2 cup beef broth
  • 1 Tbsp red wine vinegar
  • Sliced pitas or naan dippers (I get these at Costco)
  • Diced tomatoes
  • Feta cheese

Tzatziki:

  • 1/2 cup plain greek yogurt
  • 1/2 cup diced peeled, seeded cucumber
  • 1 1/2 tsp dried dill
  • 1/4 tsp kosher salt
  • 1 garlic clove, minced
  • 1 tsp olive oil
  • 1 tsp lemon juice

Instructions

  1. Turn Instant Pot to saute setting. When display says HOT add in the oil and swirl around. Add in the beef. Brown on all sides (about 5 minutes), then stir in the onion and garlic. Cook another 2 minutes.
  2. Stir in the oregano, cumin, paprika, thyme, cinnamon, salt, and pepper to coat the beef.
  3. Pour in beef broth, lemon juice, and vinegar. Scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 25 minutes. When time is up let pot sit for 15 minutes and then move valve to venting and remove the lid.
  5. Make the tzatziki sauce by stirring together all ingredients. 
  6. Serve the beef with pita, tomatoes, feta and tzatziki.
