Cheesy Beef and Potato Soup–an easy soup made with ground beef, tender red potatoes and cheddar cheese in a creamy broth. Make it in the Instant Pot or slow cooker.

Cheesy Beef and Potato Soup
One of my favorite things about this soup is that it uses simple ingredients that you probably already have on hand! You can make it in the Instant Pot for a quick dinner or let it simmer in the slow cooker if you have more time. It’s perfect served with just about any kind of bread…French bread, dinner rolls, garlic bread or breadsticks are all great for dipping. You can also sneak in some extra veggies by stirring in a handful of spinach or some frozen peas at the end of the cooking time! Another option is to add in sliced carrots and/or celery when you add in the potatoes.
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Onion
- Kosher salt
- Black pepper
- Garlic powder
- Paprika–or ½ tsp smoked paprika for heat
- Chicken or beef broth–or water and Better than Bouillon
- Red potatoes–or Yukon Gold potatoes
- Heavy cream–or half-and-half for a slightly lighter soup
- Cornstarch
- Shredded cheddar cheese–I like using sharp
Steps
Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder and paprika.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Add in the potatoes.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes on low pressure (or the soup button).
When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
Ladle a cup of hot broth in with the cream to temper it. Stir it into the pot.

Turn your Instant Pot to the saute setting. In a small bowl stir together 3 Tbsp of cornstarch with 3 Tbsp of water, until smooth. Then pour the mixture into the Instant Pot. The cornstarch mixture will thicken the soup in a couple minutes.
Turn off Instant Pot and stir in the cheddar until melted.

Ladle into bowls and serve.

Notes/Tips
- This soup is delicious with warm dinner rolls, crusty French bread, garlic bread or homemade biscuits.
- I recommend shredding your own cheddar cheese from a block. It melts more smoothly than pre-shredded cheese, which contains anti-caking ingredients.
- Stir in some frozen corn, peas or chopped spinach after pressure cooking. Let the vegetables heat through before serving.
- For a loaded baked potato soup flavor, sprinkle some crispy bacon pieces on top along with green onions and extra shredded cheddar and a dollop or sour cream on top.
- Store leftovers in an airtight container* in the refrigerator for 4 days. I don’t recommend freezing this soup once the cream and cheese have been added.
- Tools:
- I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot.
- Wooden saute paddle*
- Knife*
- Cutting board*
- Magnetic measuring cups*
- Magnetic measuring spoons*
- Glass measuring cup*
- Ladle*
