Loaded Chicken Hashbrown Casserole
This recipe reminded me of a glorified funeral potato casserole, except it’s hearty enough to be dinner thanks to the chicken and bacon mixed in. I almost always pick up a rotisserie chicken from Costco because it’s affordable and makes recipes like this incredibly convenient. I cooked my bacon in the air fryer while I mixed everything else together. However, if you want to make dinner even easier, bacon crumbles work just fine too. The ranch dressing mix is really the secret ingredient. It adds so much flavor. This is one of those casseroles that everyone seems to go back for seconds. Enjoy!
Ingredients/Substitution Ideas
- Butter
- Cream cheese
- Sour cream
- Dry ranch dressing mix
- Evaporated milk
- Frozen cubed hash browns–or frozen shredded hash browns
- Bacon–or turkey bacon
- Cooked chicken–or leftover turkey
- Shredded cheddar cheese–or Colby Jack or Monterey Jack cheese
Steps
Heat oven to 425° F. In a large mixing bowl whisk together the butter, cream cheese, sour cream, ranch dressing mix and evaporated milk until smooth and creamy.

Fold in the hashbrowns, bacon, chicken and cheddar.


Spread mixture into a 9×9 inch baking dish. Cover with foil.

Bake for 40 minutes. Remove foil and bake for 15 more minutes. Serve and enjoy!

Notes/Tips
- Serve with steamed or roasted broccoli.
- Rotisserie chicken makes this recipe come together quickly.
- No need to thaw the hashbrowns before baking.
- For extra crispy bacon flavor, sprinkle a little additional bacon over the top before serving.
- This recipe can be gluten free if you use gluten free ranch dressing mix.
