Crock Pot Vegetable Beef Soup
This is one of those easy dinners thatβs made with really basic ingredients, but it just hits the spot. Itβs warm, nourishing and the kind of meal that just makes you feel good, plus the leftovers make a great lunch the next day. I love that the only real prep is dicing an onion and cubing up some potatoes. I didnβt even peel mine since I used red potatoes. The rest of the veggies come straight from the freezer aisle, so this is just a solid, simple recipe that I think youβre really going to enjoy!
Ingredients/Substitution Ideas
- Lean ground beef–or ground turkey
- Onion–or 2 Tbsp dried onion
- Kosher salt
- Black pepper
- Garlic powder–or 1 Tbsp minced fresh garlic
- Dried thyme–or Italian seasoning
- Smoked paprika
- Beef broth–or beef Better Than Bouillon and water
- Worcestershire sauce
- Crushed tomatoes
- Red potatoes–or Yukon gold potatoes
- Frozen mixed vegetables–mine had corn, green beans, peas and carrots
Steps
Heat a pan over medium high heat. Add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, thyme and smoked paprika. Transfer to the slow cooker.

Stir in the broth, Worcestershire, crushed tomatoes and the potatoes.

Cover and cook on low for 4-6 hours. Stir in the veggies and a pinch of salt, if needed.

Ladle into bowls and serve.

Notes/Tips
- Serve with crusty bread, dinner rolls or garlic toast.
- The frozen veggies warm up quickly in the hot broth. No need to thaw beforehand.
- Taste before serving and add additional salt if needed. Mine just needed an extra pinch.
- Store leftovers in an airtight container* in the refrigerator for 4 days. Freeze leftovers for up to 3 months.

Ingredients
- 16 oz lean ground beef
- 1 cup diced onion
- 1 tsp kosher salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1/4 tsp smoked paprika
- 4 cups beef broth
- 2 tsp Worcestershire sauce
- 1 (28 oz) can crushed tomatoes
- 20 oz red potatoes, cubed
- 2 cups frozen mixed vegetables
Instructions
Instant Pot Instructions:
- Turn Instant Pot to saute setting. When display says HOT add in the beef and break it up. Add in the onion. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, thyme and smoked paprika.
- Pour in the broth and scrape the bottom of pot so that nothing is sticking.
- Add in Worcestershire, crushed tomatoes and the potatoes.
- Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set SOUP (or low pressure) button to 3 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
- Stir in the veggies and a pinch of salt, if needed.
- Ladle into bowls and serve.
Slow Cooker Instructions:
