Loaded Sausage Hashbrown Casserole–everyone’s favorite cheesy potato casserole with the addition of sausage! Makes a hearty side dish or a main dish.

Loaded Sausage Hashbrown Casserole

Skyler walked in from being gone all day and found this casserole ready to eat and said “YES!!!” He loves funeral potatoes and so this version definitely hit the spot. They are like funeral potatoes with the addition of sausage. They are very hearty, filling and delicious!

Ingredients/Substitution Ideas

  • Jimmy Dean Sausage
  • Finely Chopped Onion
  • Frozen Hashbrowns
  • Kosher Salt
  • Black Pepper
  • Garlic Powder
  • Sour Cream
  • Melted Butter
  • Cream of Chicken Soup–or cream of mushroom
  • Shredded Cheddar Cheese–I like sharp

Steps

Heat oven to 350° F. 

Heat a skillet over medium high heat. Add in the sausage and break it up. Add in the onions. Brown for about 5 minutes, until cooked through. Set aside.

In a large bowl add the hashbrowns, salt, pepper, garlic powder, sour cream, butter, cream of chicken soup and half of the cheese. Stir in the sausage. 

Spray a 9×13 inch pan with non-stick cooking spray. Add the hashbrown mixture into the pan. Sprinkle the remaining cheese on top.

Bake for 45-55 minutes, until hot and bubbly. 

Serve and enjoy!

Notes/Tips

  • Serve with a green salad or some steamed broccoli.
  • I halved the recipe by cutting all ingredients in half and using a 9×9 inch baking dish instead of a 9×13.
  • Make this ahead of time by assembling the casserole, cover it with foil and refrigerating up to 24 hours, then bake an extra 5–10 minutes.
  • If you want crispy edges, bake uncovered the whole time. If you’d rather have it softer then cover with foil for all but the last 15 minutes.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Description

Everyone’s favorite cheesy potato casserole with the addition of sausage! Makes a hearty side dish or a main dish. 


Ingredients

  • 16 oz Jimmy Dean sausage
  • 1/2 cup finely chopped onion
  • 30 oz bag frozen hashbrowns
  • 1 tsp kosher salt
  • 2 tsp black pepper
  • 2 tsp garlic powder
  • 1 cup sour cream
  • 2 Tbsp melted butter
  • 1 (10.5 oz) can cream of chicken soup
  • 10 oz shredded cheddar cheese

    Can eggs be added to this recipe? If yes, how many and will it change the baking time?

      Yes! You can add 4–6 eggs (whisked first). It will make it more like a breakfast bake. You may need to add about 10–15 extra minutes of baking time. Just bake until the center is set.

    That is pure comfort in a 9×13 pan! I love that you turned the already-delicious hashbrown casserole into a hearty main dish with the sausage. That make-ahead tip is brilliant for holidays or busy weeknights, and the note about covering it vs. leaving it uncovered for crispy edges is super helpful. I’m definitely pinning this one.
