Description

An easy dinner made with rotisserie chicken, crispy bacon, cheddar cheese, frozen hash browns in a creamy sauce.


Ingredients

Scale
  • 1/4 cup melted butter
  • 4 oz softened cream cheese
  • 1/2 cup sour cream
  • 3 Tbsp dry ranch dressing mix
  • 1/2 cup evaporated milk
  • 16 oz frozen cubed hashbrowns
  • 4 slices bacon, cooked and crumbled
  • 8 oz cooked chopped chicken (I used rotisserie)
  • 4 oz shredded cheddar cheese

Instructions

  1. Heat oven to 425° F.
  2. In a large mixing bowl whisk together the butter, cream cheese, sour cream, ranch dressing mix and evaporated milk until smooth and creamy. 
  3. Fold in the hashbrowns, bacon, chicken and cheddar.
  4. Spread mixture into a 9×9 inch baking dish. Cover with foil.
  5. Bake for 40 minutes. Remove foil and bake for 15 more minutes. 
  6. Serve and enjoy!
