Amish Winter Bliss Casserole–an easy one pot Instant Pot meal with ground beef, potatoes, carrots, green beans, and a savory tomato-based sauce that’s ready fast and perfect for busy nights.

Amish Winter Bliss Casserole

This one-pot meal has meat, veggies, and potatoes all cooked together in your Instant Pot in no time. It’s a winter favorite that’s perfect for cold nights when you want something warm without all the work. If you’re a meat lover, double the beef, or use a full pound of sausage instead for tons of extra flavor (just cut back on the salt since sausage is already seasoned). Want more veggies? Throw in some sliced mushrooms or stir in some peas at the end. This recipe is flexible so tweak it how you want and enjoy!

Ingredients/Substitution Ideas

  • Lean ground beef–or ground turkey
  • Onion–or shallot
  • Kosher salt
  • Black pepper
  • Ground thyme
  • Garlic powder–or 1 Tbsp minced fresh garlic
  • Beef broth–or water and Better Than Bouillon beef base
  • Carrots
  • Yukon gold potatoes–or red potatoes, russet potatoes
  • Fresh green beans–or frozen green beans
  • Frozen sweet corn–or canned corn (drained)
  • Tomato sauce
  • Tomato paste
  • Steak sauce–or Worcestershire sauce
  • Shredded cheddar cheese–or Colby-Jack

Steps

Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in ½ tsp of salt, pepper, thyme and garlic powder. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot. 

Add in the carrots and potatoes. Sprinkle the potatoes with ½ tsp of salt. Add in the green beans, corn, tomato sauce, tomato paste and steak sauce. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Gently stir. Scoop onto plates. Top each serving with some cheddar cheese. Enjoy!

Notes/Tips

  • This was a one pot meal for us but you can serve it with some garlic bread.
  • I used my 4 quart Instant Pot*. You can also make this in a 3, 6 or 8 quart pot.
  • Don’t stir before pressure cooking to prevent the burn error message.
  • If you love mushrooms add in 4 oz of sliced mushrooms when you add in the potatoes and carrots.
  • Instead of serving cheese on top you can also just stir ½ cup of cheddar into the entire pot after pressure cooking time is over.
  • This recipe can be gluten free if you use gluten-free Worcestershire sauce.
  • This recipe can be dairy free if you leave out the cheddar.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. Freeze in individual portions for up to 3 months. Thaw overnight in the fridge and reheat gently.

Ingredients

Scale
  • 8 oz lean ground beef
  • 1/2 cup diced onion
  • 1 tsp kosher salt, divided
  • 1 tsp black pepper
  • 1 tsp ground thyme
  • 1 tsp garlic powder
  • 1/2 cup beef broth
  • 3 carrots, peeled and cut into 1 inch pieces
  • 16 oz yukon gold potatoes, cut into 1/2 inch cubes
  • 8 oz fresh green beans, trimmed and cut into 1 inch pieces
  • 1/2 cup frozen sweet corn
  • 1 (8 oz) can tomato sauce
  • 1 Tbsp tomato paste
  • 1 Tbsp steak sauce
  • Shredded cheddar, for serving

    I’m wondering if there’s a reason that you chose to use only eight ounces of ground beef. Do you think there’s a problem with doubling that? 17 grams of protein per serving isn’t much considering that this is dinner. Thanks.
