Description

An easy one pot Instant Pot meal with ground beef, potatoes, carrots, green beans, and a savory tomato-based sauce that’s ready fast and perfect for busy nights.

Ingredients

Scale
  • 8 oz lean ground beef
  • 1/2 cup diced onion
  • 1 tsp kosher salt, divided
  • 1 tsp black pepper
  • 1 tsp ground thyme
  • 1 tsp garlic powder
  • 1/2 cup beef broth
  • 3 carrots, peeled and cut into 1 inch pieces
  • 16 oz yukon gold potatoes, cut into 1/2 inch cubes
  • 8 oz fresh green beans, trimmed and cut into 1 inch pieces
  • 1/2 cup frozen sweet corn
  • 1 (8 oz) can tomato sauce
  • 1 Tbsp tomato paste
  • 1 Tbsp steak sauce
  • Shredded cheddar, for serving

Instructions

  1. Turn Instant Pot to sauté setting. When display says HOT add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in ½ tsp of salt, pepper, thyme and garlic powder.
  2. Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.
  3. Add in the carrots and potatoes. Sprinkle the potatoes with ½ tsp of salt. Add in the green beans, corn, tomato sauce, tomato paste and steak sauce. Don’t stir.
  4. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 4 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.
  5. Gently stir. Scoop onto plates. Top each serving with some cheddar cheese. Enjoy!
