Angel Beef Casserole

Angel Beef Casserole

This is an easy, smaller batch tater tot casserole made from scratch without any cream of soups. Greg loved this one and it was almost all eaten by just the two of us. You can make it in on the stove and in the oven or if you have an Instant Pot with an air fryer lid you can make it that way. I used my air fryer lid and that worked really well to crispy up the tots in half the time as an oven. (Recipe adapted from Recipes that Crock).

Ingredients/Substitution Ideas

  • Lean ground beef–I used 93/7. Ground turkey is also an option.
  • Mushrooms
  • Kosher salt
  • Black pepper
  • Onion powder
  • Garlic powder
  • Italian seasoning
  • Smoked paprika
  • Cream cheese–or half a can of cream of mushroom soup
  • Milk
  • Cornstarch
  • Tater tots–I use Ore-Ida
  • Parmesan cheese–or cheddar

Steps

Turn Instant Pot to saute setting. When display says HOT add in the ground beef and break it up. Add in the mushrooms, salt, pepper, onion powder, garlic powder, Italian seasoning and smoked paprika. Cook the meat through for about 5-7 minutes.

Stir in the cream cheese and milk until the cream cheese is melted and incorporated.

Thicken the sauce by stirring cornstarch together with 1 Tbsp of cold water until smooth. Stir the mixture into the pan until sauce thickens. Turn off the saute setting.

Sprinkle the tots evenly over the top. Place air fryer lid on the top and air fry at 400° F for 12 minutes. Add parmesan and bake for 1 more minute.

Serve and enjoy!

Notes/Tips

  • Serve with green beans and corn on the cob.
  • Add a veggie boost by mixing in thawed peas, corn, or chopped spinach before baking.
  • I used my Duo Crisp Instant Pot*. This has an air fryer lid that is helpful to crisp up or melt cheese etc.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Other recipes you can make with cream cheese are Pam’s Casserole and Amish Supreme Casserole.

this sounds delicious so I’ll be making it tomorrow. am I correct that you don’t drain the seasoned beef/shrooms before moving to the next step? Also, no need to grease the pan if I am preparing it in the oven? thank you

If there’s excess grease then you can drain…mine didn’t need to be drained since it was pretty lean
