Santa’s Midnight Casserole
This cozy breakfast recipe is like a mashup of Southern comfort and hearty diner food, with a few fun twists. I snagged the idea for this recipe from Santa’s Midnight Casserole on Cooks.com. I think the idea is that it’s a hearty breakfast that Santa would be happy to have midway through delivering all those presents. Although it seems a little strange it actually tastes super yummy!
Ingredients/Substitution Ideas
- Ground breakfast sausage–I used Jimmy Dean
- Mushrooms
- Butter
- Flour
- Milk
- Nutmeg
- Kosher salt
- Black pepper
- Worcestershire sauce
- Cheddar cheese–I used sharp
- Hard boiled eggs—I hard boil eggs in the Instant Pot
- English muffins, biscuits or toast–for serving
Steps
Heat a pan over medium high heat. Add in the sausage and break it up. Brown.

Add in the mushrooms and cook until browned.

Turn heat down to medium. Make a space in the middle of the pan and add in the butter and let it melt. Slowly whisk in the flour.

Slowly stir in the milk and little at a time. Stir until it thickens.

Stir in the nutmeg, salt, pepper, Worcestershire, cheese and eggs. Once well combined and cheese is melted turn off the heat.


Serve over toasted english muffins, biscuits or toast.

Notes/Tips
- Serve as breakfast, brunch or breakfast for dinner. Serve with some fresh fruit like orange slices or strawberries.
- Add flour gradually. Stir constantly when adding flour to avoid lumps in the roux. Warm your milk slightly this helps it blend more smoothly into the roux and prevents curdling. Stir constantly while thickening to avoid scorching and to get a smoother texture.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.
