Rollercoaster Casserole
This is sort of a huge pancake in a baking pan that looks like a roller coaster. It is fun to watch if you have a glass door oven. I decided to give it a shot in the slow cooker which didn’t give it the bumpy roller coaster look as much as the oven or the browning that typically occurs. But it still tasted good with a generous sprinkling of powdered sugar and sliced strawberries. I ate a leftover piece with maple syrup on top and that was yummy too!
Ingredients/Substitution Ideas
- Eggs
- All purpose flour
- Sugar
- Salt
- Milk
- Butter
- Vanilla
- Powdered sugar or maple syrup, for topping
Steps
Spray a 6 quart slow cooker with non-stick cooking spray.
Add eggs into a medium bowl and whisk well.

Slowly add in the flour and beat well. Stir in the sugar, salt, milk, melted butter and vanilla.

Pour into the slow cooker and cook on high for 2 hours.


Sprinkle with powdered sugar and serve with butter, syrup, strawberries, etc.


Notes/Tips
- Serve with powdered sugar, maple syrup, jam, butter, honey, fresh fruit, whipped cream, etc.
- I used a 6 quart slow cooker.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months. Cut into individual pieces to make it easy to pop a serving into the microwave to reheat.

- 6 large eggs
- 1 cup all purpose flour
- 3 Tbsp sugar
- 1/2 tsp salt
- 1 cup milk
- 2 Tbsp melted butter
- 1 tsp vanilla
- Powdered sugar or maple syrup, for topping
Instructions
Oven Instructions:
- Spray a 9×13 inch pan with non-stick cooking spray and place it in the freezer. Heat oven to 450° F.
- Add eggs into a medium bowl and whisk well.
- Slowly add in the flour and beat well. Stir in the sugar, salt, milk, melted butter and vanilla.
- Pour into the cold pan and bake at 450° F for 18 minutes and then 350° F for 10 minutes.
- Sprinkle with powdered sugar and serve with butter, syrup, strawberries, etc.
