Huntsville Casserole

Today’s recipe is a fast and easy dinner with only 7 ingredients. It’s an easy chicken, rice and vegetable dinner that is great for lunch leftovers the next day too. You can mix and match what you have on hand and what you like best. For example, use peas instead of broccoli, use cream of chicken instead of cream of mushroom, or use raw chicken instead of rotisserie chicken. Enjoy!

This recipe was adapted from Huntsville Heritage Chicken Casserole on Food.com. Steff, the original author, states, “My grandmother makes this at Christmas and it is so good.”

Ingredients/Substitution Ideas

  • Butter–or olive oil
  • Onion–yellow, white
  • Chicken broth–or water and Better than Bouillon
  • Long grain and wild rice with seasoning packet–some brands are Farmhouse, Rice-a-Roni, Ben’s
  • Rotisserie chicken–or basic shredded chicken
  • Cream of mushroom–or cream of chicken soup
  • California blend frozen vegetables–or another type of vegetable you like

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the onion and saute for 4 minutes. 

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the rice and seasoning packet.

Add chicken and cream of mushroom soup on top. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Cook vegetables according to package directions (I steamed mine in the microwave). Stir the vegetables into the Instant Pot. 

Salt and pepper to taste. Serve and enjoy!

Notes/Tips

  • Serve with a green salad.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Variation: try serving this topped with shredded cheddar cheese.
  • Variation: try sauteeing some sliced mushrooms at the same time as the onions.
  • Can I use raw chicken instead of rotisserie chicken? Yes. You’ll need to cut up the raw chicken into bite size pieces before adding them into the Instant Pot though. Use the same cooking time. I suggest using boneless thighs.

Description

Ingredients

Scale
  • 2 Tbsp butter
  • 1 cup diced onion
  • 1 1/4 cups chicken broth
  • 1 (4 oz) package long grain and wild rice with seasoning packet (some brands are Farmhouse, Rice-a-Roni, Ben’s)
  • 3 cups chopped rotisserie chicken
  • 1 (10.5 oz) can cream of mushroom or cream of chicken soup
  • 1 (12 oz) package California blend frozen vegetables

Instructions

    Another winner! I used a frozen stir fry veg mix which added lots of flavor to this already great dish. Will make again. Thank you. Loved the wild rice I used rice-a-roni

    This was pretty good and very easy to make. I used rotisserie chicken from Costco and heart healthy Cream of Mushroom soup. My only change was adding some crushed garlic the last minute of cooking the onions. Very tasty. Something my college aged daughter could make in her IP at her apartment.

      Can I use raw chicken instead of rotisserie chicken? Yes. You’ll need to cut up the raw chicken into bite size pieces before adding them into the Instant Pot though. Use the same cooking time. I suggest using boneless thighs.
