Country Boy Casserole

Today’s recipe is a hearty chicken pasta recipe with an alfredo-tomato sauce, cheese, bacon and more! You’re going to love this topped with a few drops of hot sauce. I fed this to Skyler, his 3 friends and Greg and they ate it until it was gone. I loved how this was a dump and go recipe for a quick prep time. If you don’t have cooked chicken on hand don’t worry you can use raw chicken…see the notes section for how.

Ingredients/Substitution Ideas

  • Chicken broth–or water and Better than Bouillon chicken base
  • Rotini pasta–or penne pasta
  • Chopped, cooked chicken–I usually use rotisserie chicken, I buy at Costco
  • Diced tomatoes–I like petite diced
  • Tomato sauce
  • Alfredo sauce–I used classico brand
  • Garlic powder
  • Italian seasoning
  • Black pepper
  • Crushed red pepper flakes
  • Bacon crumbles–or fry up some bacon and crumble
  • Colby jack shredded cheese–or sharp cheddar

Steps

Pour broth into Instant Pot. Sprinkle in the pasta. Lay the chicken on top of pasta. Dump in the tomatoes, tomato sauce…

alfredo sauce…

garlic powder, Italian seasoning, pepper and red pepper. Don’t stir.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 3 minutes. When time is up let pot sit for 10 minutes. Move valve to venting. Remove the lid.

Stir in the bacon and cheese.

Serve topped with a few drops of hot sauce, if desired.

Notes/Tips

  • Serve with a green salad or a caesar salad.
  • Variation: Add in half a can of tomato sauce and replace the other half with that amount of barbecue sauce.
  • I used my 6 quart Instant Pot*. You can also make this in an 8 quart pot. Halve the recipe for the 3 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months.
  • Can I use raw chicken? Yes you can. Cut up bite size pieces of chicken thighs or chicken breasts and add them into the pot (when it says to add in the cooked chicken). I would use about 1 to 1.5 pounds of raw chicken. Likely your chicken will put off some liquid so you may want to cut the broth to 3 ¾ cups instead of 4 cups.
  • If you use another type of pasta you may need to adjust the cooking time. Here is the formula: look at the back of the box of pasta and see how many minutes it says to boil the pasta. If it’s 10 minutes you divide that number by 2 (=5) and then subtract 2 minutes. So you would pressure cook for 3 minutes. I usually use a 5-10 minute natural pressure release for pasta.

Description

An easy dump and go Instant Pot recipe of rotini with chicken, bacon, alfredo sauce, tomatoes and cheese.


Ingredients

Scale
  • 4 cups chicken broth
  • 16 ounces rotini pasta
  • 3–4 cups chopped, cooked chicken
  • 1 (14.5 oz) can diced tomatoes
  • 1 (8 oz) can tomato sauce
  • 1 (15 oz) jar alfredo sauce
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp Italian seasoning
  • 1/2 tsp black pepper
  • Pinch crushed red pepper flakes
  • 1/2 cup bacon crumbles
  • 1 cup colby jack shredded cheese
  • Hot sauce, for serving

Instructions

  1. Pour broth into Instant Pot. Sprinkle in the pasta. Lay the chicken on top of pasta. Dump in the tomatoes, tomato sauce, alfredo sauce, garlic powder, Italian seasoning, pepper and red pepper. Don’t stir.

    What a great way to serve a crowd!
    This is an easy recipe and needs no tweaking!
    Love it Love it Love it!
    It makes a lot so I’ll be sharing with neighbors and freezing some.
    I used cooked chicken I had prepared and froze. I did thaw it before I added it to the pot.
