Quarterback Casserole

Quickness and consistency are what you want from your quarterback. This dish is consistently good and it’s quick to make! With only a handful of ingredients you can be enjoying this dinner in no time. The casserole brings the tasty ingredients together in a way that’s both satisfying and easy to serve, making it a great choice for game day gatherings, family dinners, or any occasion where you want a comforting meal. Enjoy!

Ingredients/Substitution Ideas

  • Butter
  • Beef smoked sausage–or kielbasa
  • Onion–yellow, white
  • Garlic cloves
  • Chicken broth–or beef broth
  • Wagon wheel pasta–or penne pasta
  • Pace picante sauce–I use mild
  • Sour cream
  • Sharp cheddar cheese

Steps

Turn Instant Pot to saute setting. When display says HOT add in the butter and let it melt. Add in the smoked sausage and brown for a couple minutes on each side. Add in the onions and saute for 3 minutes. Add in the garlic and saute for 30 seconds.

Pour in the broth and scrape bottom of pot so that nothing is sticking. Turn off Instant Pot.

Sprinkle in the pasta. Dump in 1 cup of the picante sauce.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up let pot sit for 10 minutes and then move valve to venting. Remove the lid.

Stir in the remaining ½ cup of picante sauce, the sour cream and cheddar.

Serve and enjoy!

Notes/Tips

  • Serve with a side of roasted broccoli.
  • My son loved chopped up pickles in his portion!
  • I find wagon wheel pasta at Winco in the bulk section.
  • I used my 6 quart Instant Pot*. You can also make this in a 3 or 8 quart pot.
  • Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months. I think the leftovers were almost better than the first day.
  • Other recipes you can make with picante sauce are Barn Raising Soup and Instant Pot Fiesta Chicken Casserole.
  • If you use another type of pasta you may need to adjust the cooking time. Here is the formula: look at the back of the box of pasta and see how many minutes it says to boil the pasta. If it’s 10 minutes you divide that number by 2 (=5) and then subtract 2 minutes. So you would pressure cook for 3 minutes. I usually use a 5-10 minute natural pressure release for pasta.

Ingredients

  • 1 (12 oz) package beef smoked sausage, sliced into quarter inch rounds
  • 1 cup diced onion

    I would love to make this but I do not have an instant pot. I am honestly scared of them. Is there a slow cooker method?
