Two Thumbs Up Casserole
Potatoes, ham, chicken and alfredo sauce are the stars of this delicious casserole. It’s guaranteed that you’ll get two thumbs up from your family members after they try this delicious dinner that combines chicken alfredo with chicken cordon bleu. With only 7 ingredients this recipe comes together quite quickly. I finished off the dish by baking it with my air fryer lid*. However, if you don’t have an air fryer lid you can still make this recipe and finish it off in your oven.
Ingredients/Substitution Ideas
- Red potatoes–or Russet potatoes that have been peeled
- Kale leaves–or chopped spinach
- Ham cubes
- Rotisserie chicken–or cooked, chopped chicken cut of your choice
- Bertolli garlic alfredo sauce–or another brand of Alfredo that you enjoy. Another choice is to make your own from scratch.
- Panko
- Melted butter
Steps
Pour 1 ½ cups water into bottom of Instant Pot. Add the potatoes and kale to a steamer basket*. Drop the basket into the bottom of the Instant Pot.
Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 4 minutes. When time is up move valve to venting and remove the lid.
Move the steamer basket out of the pot. Discard the water.
Pour the potatoes and kale into the Instant Pot. Add in the ham and chicken.
Add in the alfredo sauce. Stir.
Cover Instant Pot with air fryer lid. Bake at 325 degrees for 10 minutes.
In a small bowl stir the melted butter and panko together. Sprinkle the panko over the top of the potato mixture. Air fry for 2 minutes at 400 degrees.
Serve and enjoy!
Notes/Tips
- Serve with a spinach salad, roasted broccoli or sweet corn saute.
- I used my Duo Crisp 6 quart Instant Pot*. If you don’t have an air fryer lid you can sprinkle with the panko mixtures and place your stainless steel Instant Pot liner (or transfer mixture to a baking dish) in the oven and bake at 350 for 25 minutes.
- I love buying $5 rotisserie chickens at Costco, removing the meat and storing in the freezer in 2-3 cup increments. It is perfect to use in recipes like this one. You can also cook chicken in the Instant Pot and store in the freezer for later.
- If you don’t like jarred Alfredo sauce try making your own from scratch.
- If you want to make this recipe healthier try making cottage cheese alfredo sauce.
- This recipe can be gluten free if you use gluten free alfredo sauce.
- Store leftovers in an airtight container* in the refrigerator for up to 5 days or in the freezer for up to 3 months. The crispy topping is definitely best the first day but the other part of the casserole works well as leftovers.

- 1/3 cup panko
- 2 Tbsp melted butter
