Zicken Casserole

Zucchini + Chicken = Zicken. It’s good and you’re going to love it 😉 This quick and easy zicken skillet is a weeknight hero! Juicy, bite-sized chicken thighs get a flavorful boost from Italian seasoning, garlic, and a hint of soy sauce. Toss in some mushrooms and zucchini for a veggie-packed punch, brightened with a splash of lemon juice. It all comes together in one pan in under 30 minutes, with minimal fuss and maximum flavor. Top it off with a sprinkle of Parmesan cheese, and you’ve got a satisfying meal that’s as healthy as it is delicious. Perfect for serving solo or alongside your favorite grains or pasta!

Ingredients/Substitution Ideas

  • Olive oil–or vegetable, canola
  • Boneless skinless chicken thighs–or chicken breasts
  • Kosher salt
  • Black pepper
  • Italian seasoning
  • Mushrooms
  • Zucchini
  • Garlic cloves–or ½ tsp garlic powder
  • Lemon juice–fresh is best
  • Low sodium soy sauce–or tamari
  • Parmesan cheese–optional

Steps

Heat a large pan over medium high heat. Add in the oil and swirl around. Pat the chicken dry and add it into the pan in a single layer. Sprinkle with ½ tsp of the kosher salt, the pepper and the Italian seasoning. Let them cook without stirring for 2 minutes. Then flip over and cook for another 2 minutes.

Stir in the mushrooms and zucchini. Sprinkle the remaining ½ tsp of kosher salt over the vegetables. Stir in the garlic, lemon juice and soy sauce.

Cook through until most of the liquid is gone and the zucchini are tender. Turn off the heat.

Serve and enjoy with a sprinkling of parmesan cheese.

Notes/Tips

  • Serve with a side of rice pilaf or keep it low carb and serve over mashed cauliflower.
  • This can be dairy free if you don’t add the parmesan cheese.
  • This recipe can be gluten free if you use gluten free soy sauce.
  • This recipe is fairly low carb.
  • Try adding in thinly sliced carrots to add more veg and more color.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. Zucchini doesn’t freeze great so I don’t recommend freezing this dish.

Ingredients

Scale
  • 2 Tbsp olive oil
  • 20 ounces boneless skinless chicken thighs, trimmed of excess fat and cut into bite size pieces
  • 1 tsp kosher salt, divided
  • 1/2 tsp black pepper
  • 1/2 tsp Italian seasoning
  • 4 ounces sliced mushrooms
  • 2 small zucchini (about 16 ounces), halved lengthwise and sliced
  • 6 large garlic cloves, minced
  • 2 Tbsp lemon juice
  • 2 tsp low sodium soy sauce
  • Parmesan cheese, for topping

    I just made this tonight and it was a huge hit! I added a red bell pepper and a red onion to the mix for more veggies. A dash of crushed red pepper for a hint of spice. I served with pasta and Alfredo sauce then mixed it all together on my plate. It was amazing!
