Wolfe Creek Beef Casserole
This recipe is adapted from Jen’s Wolfe Creek Beef Casserole on Expedition Australia. The author states that this is a great one pot meal to make on the road, “We’re always on the lookout for meals to cook on our road trips that are fast, healthy, tasty and don’t use a lot of pots and pans – to save water and washing up.” I adapted the recipe to make in the Instant Pot and the slow cooker. This truly was a great one pot meal in that it was healthy, hearty enough and flavorful. The small portion that was leftover I ate for lunch today and enjoyed!
Ingredients/Substitution Ideas
- Water
- Beef stew meat–or chuck roast cut into cubes
- Montreal steak seasoning
- Better than Bouillon beef base
- Onion–or shallot
- Yukon gold potatoes–or red potatoes
- Garlic powder–or 1 Tbsp minced fresh garlic
- Dried thyme
- Dried rosemary
- Red pepper flakes
- Red wine vinegar–or balsamic vinegar
- Tomato paste
- Crushed tomatoes
- White beans–or great northern or cannellini beans
- Frozen sweet corn–or canned corn
- Spinach–or kale
- Kosher salt
- Black pepper
Steps
Add water, beef stew meat, steak seasoning, Better than Bouillon and onion into Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 20 minutes. When time is up move valve to venting. Remove the lid.


Dump in the potatoes, garlic powder, thyme, rosemary, red pepper flakes, vinegar, tomato paste, crushed tomatoes and white beans. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 5 minutes. When time is up let pot sit for 10-15 minutes and then move valve to venting. Remove the lid.


Stir in the corn, spinach and then salt and pepper to taste.

Ladle into dishes and serve.

Notes/Tips
- Serve with crusty bread or dinner rolls.
- For deeper flavor, you can sear the beef first before pressure cooking.
- For the Instant Pot method cooking the beef first keeps it tender, then adding potatoes and veggies prevents them from overcooking.
- This recipe is gluten free and dairy free.
- I used my 6 quart Instant Pot*. You can also make this in a 4 or 8 quart pot.
- Store leftovers in an airtight container* in the refrigerator for up to 4 days or in the freezer for up to 3 months.

Ingredients
- 1 cup water
- 16 oz beef stew meat
- 1 tsp Montreal Steak seasoning
- 1 Tbsp Better than Bouillon beef base
- 1 onion, quartered
- 16 oz yukon gold potatoes, cut into cubes
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- Pinch of red pepper flakes
- 1 Tbsp red wine vinegar
- 1 Tbsp tomato paste
- 1 (14 oz) can crushed tomatoes
- 1 (15 oz) can white beans, rinsed and drained
- 1 cup frozen sweet corn
- 2 cups chopped spinach
- Kosher salt, to taste
- Black pepper, to taste
Instructions
Instant Pot Instructions:
- Add water, beef stew meat, steak seasoning, Better than Bouillon and onion into Instant Pot. Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set manual/pressure cook button to 20 minutes. When time is up move valve to venting. Remove the lid.

- Cover and cook on low for 4 hours, or until beef is tender.
- Stir in the corn, spinach and then salt and pepper to taste.
- Ladle into dishes and serve.
