Ultimate Cattle Drive Casserole

Cheesy Taco Biscuit Bake

This casserole is a fun change of pace. It starts with a biscuit crust and then you pile on a flavorful taco-style beef mixture with fire-roasted tomatoes and green chiles. The next layer is a creamy topping made with mayonnaise, sour cream, and Greek yogurt and finally it’s topped with shredded sharp cheddar cheese. I love how easy this is to throw together on a busy night. The whole family was home plus one of Skyler’s friends and we ate the entire pan. Enjoy!

Ingredients/Substitution Ideas

  • Pillsbury biscuits
  • Lean ground beef–or ground turkey
  • Onion–or shallot
  • Kosher salt
  • Black pepper
  • Garlic powder–or 1 Tbsp minced garlic
  • Onion powder
  • Chili powder
  • Cumin
  • Dried oregano
  • Fire roasted tomatoes–or diced tomatoes
  • Diced green chiles
  • Mayonnaise
  • Sour cream
  • Greek yogurt
  • Shredded cheddar cheese–or Monterey Jack cheese

Steps

Heat oven to 375° F. Spray a 9×13 inch pan with non stick cooking spray. Open the biscuits and press them into the bottom of the pan to make a crust. Bake for 10 minutes. Set aside.

Heat a pan over medium high heat. Add in the beef and break it up. Add in the onions. Brown for 5 minutes. Drain off excess grease. Stir in the salt, pepper, garlic powder, onion powder, chili powder, cumin and oregano. Stir in the tomatoes and green chiles and bring to a simmer. Pour the mixture over the biscuits. 

In a bowl whisk together the mayo, sour cream and yogurt. Drop it by dollops over the top of the meat mixture.

Sprinkle the cheddar on top. Bake for 30 minutes. 

Let it sit for 5 minutes before slicing and serving.

Notes/Tips

  • Serve with a green salad or some steamed green beans.
  • If your ground beef releases a lot of grease, drain it well before adding the tomatoes.
  • Add a handful of corn or black beans to the meat mixture if you want to stretch the casserole further.
  • Store leftovers in an airtight container* in the refrigerator for up to 4 days. This casserole can be frozen after baking. Cool completely, wrap tightly, and freeze for up to 2 months. Thaw overnight in the refrigerator before reheating.

Ingredients

  • 12 oz package Pillsbury biscuits
